Buttery Soft Pretzels
A great, fun and easy recipe. Thought I would give it a try as pretzel rolls are hard to find in bakeries here. This was so easy and tasty that we actually made them 2 days in a row, trying a few different additions and substitutions. I used a dough hook on my stand mixer and let it knead the dough. That worked wonderfully, however I found I needed quite a bit extra water added to get the right bread dough consistency. Instead of adding oil, I melted a tablespoon of unsalted butter. It added a nice, subtle buttery flavor to the finished pretzel. As I was looking for pretzel rolls, I followed this recipe and then shaped the dough into sticks and they came out perfectly, only having to adjust the baking time. The baking time for sticks was nearly double, but worth it. My next try is going to be with rye flour and carroway seeds. Then I might try wrapping the dough around a hot dog before the bath and bake, making pretzel dogs! Whatever the outcome, this is the best recipe I've found. We've got our pretzel rolls for Oktoberfest!

Sarah's Banana Bread Muffins
Great, easy recipe. As others wrote, it is a bit sweet, so the sugar can be reduced if desired. I also added an extra banana as the ones I had were kind of med/small size. I upgraded the recipe a bit as pecans were on sale, so I was able to use chopped pecans in place of the walnuts. I then added a streusel topping before baking. What a difference! This turned the muffins into something you might find at a bakery or coffee shop. To make the streusel, mix 1/4 cup packed brown sugar, 1/4 cup chopped nuts (pecans here too), 1 tsp. cinnamon and 1 Tbsp. softened butter. Combine with fork until crumbly. Cover filled muffin cups before baking. ENJOY!!

Walnut Maple Fudge
Made this without walnuts and it came out superbly smooth and rich. Very easy to make. Will try the next batch with the walnuts.
