Pressure Cooker Carnitas

Fabulous! So much flavor! I rarely use my pressure cooker, so it was awesome finding such a gem of a recipe to help me be less intimidated by it! I cut my pork into larger pieces for easy shredding, but skipped the review suggestion of putting it back in the oven for browning. I only used one kind of pepper since big hatch chilies were on sale in my area. I didn't have any coriander, so I had to omit that. It was really great. There was so much leftover liquid. . . I plan to use it as a base for some chili, but it would also make such a great stew. I think next time I will purposefully add more broth/water so I will have even more leftover liquid for that purpose.

Spanish Rice II

I used olive oil infused with garlic, since it was what I had on hand. I also used chicken broth instead of water. It seemed a little bland, but it was tasty in a burrito. My family said there were too many tomatoes. It was very easy to make, so I wouldn't be opposed to trying it again, maybe with fresh garlic and possibly saute some carrots next time.

Spiced Pumpkin Seeds

Very good! I found the cooking time to be a little too long. I'll try reducing it to 40 minutes next time. It's probably a good idea to put the seeds in a colander and rinse them before proceeding with the recipe.

Pork Chops with Apple Curry Sauce

My somewhat picky family is new to curry, so I wasn't sure what their reaction would be. They loved it! I slightly decreased the butter, and that seemed fine. I also found the cooking time to be a tad long, so I'll have to watch that next time. This is a very saucy dish, so be sure to serve it with rice. I'll definitely make it again!
