Peanut Butter Chip Chocolate Cookies

These are amazing. I had to leave them in the oven for an extra minute or two and then let them cool for a while before tranferring them to the rack. I didn't do that with my first batch and they basically remained as dough. Still tasty, though!

White Chocolate Bread

I've made this many times within the past few months - I made it for a family event and people keep requesting it. It's amazing. Some family members used it to make french toast! My only comment is that in my breadmaker, I had to add an extra half-cup of bread flour.

Red Potato Chicken

This was good. Baked for a half-hour with foil and then a half-hour without. I also added some extra seasonings: garlic salt, rosemary, pepper.

Chipotle Shrimp Tacos

These were really good! Just incredibly spicy. Prep time was significantly longer for me, though, as I had to fry all the bacon and I didn't have precooked shrimp. I served with rice on the side.

Cheddar Beef Enchiladas

These were really tasty! I followed the advice of some other reviewers and added onions and garlic powder when I cooked the ground beef. I mixed in yellow rice instead of white rice, but only because that's what I had on hand. Turned out really well! I was nervous about how the soup and the salsa would taste together, but it was indeed very tasty. :)

Chicken Enchiladas V

This was prety good. I only made a few changes. I sauted the onions, and I added taco seasoning when I mixed in the chicken and chiles. The recipe didn't seem to call for enough sauce, so I topped with enchilada sauce. Will make again!

Cheese and Bacon Potato Rounds

This recipe is good, but the potatoes have to be baked for WAY longer than the recipe states. I had to bake the potatoes for 50 minutes before I added the bacon and potatoes (after which I baked again for 15 minutes).
