This is an excellent, awesome, super easy recipe!! If I could give it more than 5 stars I would. I used 4 or 5 boneless skinless frozen chicken thighs. If I can find it I use the El Pato brand tomato sauce (hot mexican sauce) that can be found in the ethnic food section at the grocery store. This makes it spicy so if you want to tone it down stick with the red enchilada sauce. 2 cans of Kuners tomatoes and chilies and added the Cilantro during the last 20 minutes. This is a keeper recipe.
