Ground Turkey Casserole

I make this on a regular basis. It is only mysef and my husband, but we use the leftovers for lunches at work, and it reheats beautifully. The only changes I've made to it -- I leave out the sugar (I find it unnecessary), and I take the ground turkey and tomato and mix them directly in a bowl to mix directlywith the sour cream mixture. I find it easier to spread with all four items mixed together than trying to do 2 separate layers. I also use low fat version of everything, and it still tastes great!

Cordon Bleu Chicken Rolls

This was great!! My husband doesn't like swiss cheese, so I substituted provolone, and don't feel like I lost anything. It tasted great, and the rolls are easy to heat up as leftovers!
