Baked Kale Chips

So I made the first batch, followed another reviewers suggestions and turned my dish 180 degrees for best crispness. I had to make another batch for my family to try. OMG DELICIOUS! I can see how adding different spices will enhance them even more. Look out potato chips!

Pumpkin Chili

I give the spices some love in this recipe and gobble it up! I use the whole can of pumpkin too and only one can of beans. It's great!

Janet's Rich Banana Bread

Ok, I couldn't even wait for it to get out of the oven it smelled so good. I didn't have enough sour cream, but had an extra banana so I used a 4th banana. I also decided to use a fluted pan, so it's more of a cake, so I added raw sugar and walnuts on top. YUMMY!

Sorta Salisbury Steak

Quick and Easy Tuna Casserole

I was looking for a quick tuna recipe because I couldn't make tuna cakes. After looking in the cupboard I had to make a few substitutes to this recipe, especially since this was only going to be for 2. I used 1 can of tuna, 3 light mozz cheese sticks, and mac-n-cheese noodles. I seasoned well with an all spice I had, added some more garlic, and added 1.5T of butter. It turned out very well and the hubby liked it too!

Chicken Salad Spread

This was so simple and actually pretty tasty. I usually add green grapes to my chicken salad and thought I'd do the same with this, but it wasn't necessary. I didn't have celery and I had leftover shredded chicken from City BBQ that worked out perfectly for a nice rich smoky flavor. I think I'll be using this for my recipe from now on and mixing in what I need to when I want to.

Asian Salmon

Soft Sugar Cookies IV

Finally found a recipe that I like. Buttery, soft, sugary, and oh so delicious! My only challenge was not having the right amounts of shortening and butter on hand, so I used what I had and added 6T of margarine and they are still GREAT!

Soft Chocolate Chip Cookies II

My mom and I had made a batch of cookies (from the chips package) the week before. Since I didn't want to use all butter I chose this recipe and LOVED IT! I think I'll be using this recipe from now on.

Tuna Noodle Casserole from Scratch

Great dish. Like others I made some changes and didn't keep it to scratch because I didn't have the time. I used a cooking spray to coat my pan, I used cream of mushroom soup, but heated it with 1/4c white wine, 1/8tsp buffalo hot sauce, italian spices, frozen peas & carrots (that stayed firm while baking), parmesean cheese, and 1/2c plain yogurt. I topped my casserole with casserole blend cheese and Ritz crackers. My husband and I really enjoyed this dish and it made plenty! I'll be making this again.

Italian White Bean and Pancetta Soup

4 stars only because I didn't follow the recipe as written, but I like the version I made. I skipped the pasta and celery, and used regular yellow onion as that's all I had on hand. Instead I added diced red potatoes, carrots, and chicken (hubby needed more for dinner), and I only had half a can of chicken broth left, so I added water and the drippings from the baked chicken (20min on 400) and sea salt. WOW! We ate this wonderful dish with cornbread and followed up with a lowfat pear crisp. One of the best fall meals. This one is a keeper!

Sour Cream Waffles

I agree with 1JOHN513, THESE WAFFLES WERE EXCELLENT! My husband is still asking me how did I make waffles without milk (it'll be my secret). Added a little sugar, vanilla, and used Greek yogurt--YUMMY! Oh the things you can do without milk!

Grandma's Gingersnaps

The first time I made these my friend came to my house and told me it smelled like Christmas and her grannies house. I figured out how to make the balls small enough before I spread them out using a little finger pat. I made them a second time for a potluck and I did something wrong because the cookies flattened on me, but my co-workers went to town on them and said they were divine. I like making them with Splenda and then rolling them in Turbinado (raw) sugar before they bake. Definitely a keeper!

Kettle Corn

All I can say is I'M AN ADDICT! I found this recipe Friday and since then I've made at least 2 batches EVERY day! The 3 kernel test is a must, and the 3sec on/3 sec off is a must. I wait until the popping slows down to about 2 or 3 pops then take it off and whip it into the bowl. As I watch the brown carameled goo come off the bottom of the pan I quickly dash on sea salt and break the popcorn apart with a fork for easy hand to mouth action. OMG! I cannot believe it took me this long to find this recipe. NO MORE STORE BOUGHT KETTLE CORN!!!

Incredibly Easy Chicken and Noodles

Didn't have frozen noodles or all of the canned soups needed. Looking through some other recipes and reviews though I used a little milk, white wine, and leftover french onion dip (substitute for sour cream)to make my sauce. All I can say is AWESOME and don't knock it till you try it! This recipe is a definite keeper!

Oatmeal Banana Cupcakes

Very moist, used Splenda, sugar free maple brown sugar instant oatmeal, and sugar free honey, but they tasted great. Definitely a muffin not a cupcake, but whaddya expect??? Will keep.
