About this Cook
I`m a man that enjoys to cook and entertain and have a special ability to do it without much trouble and almost out of nothing. I`m creative and spontaneous. My cooking reveals my character. Though I'm very formal in my ways and enjoy making every meal special. It is about the only time of the day when I can relax and I spect to make of every meal a special time to share and be merry. I realy miss when I must eat out, specially since my job often requires me to, and even worse if the people I`m with doesn`t share my passion for good food.I had some proffetional experience and have taken some courses in cooking, at home and also in N.Y.C. and New Orleans.
My favorite things to cook
I love "new mexican cuisine" (not cuisine from New Mexico, but new ways to cook mexican),I'm good at it. I`m always trying new things. Italian, provenzal, mediterranean cooking I enjoy making. Rustic pheasant food is what I like the most, even thouhg I enjoy making sophisticated stuff when the ocassion, but specialy the guest, deserve the work and time. I feel that in roustic cooking relies the true spirit of people and nations. When I travel I always look for places to eat loccally poduced and prepared real food.
My favorite family cooking traditions
I come from very diverse traditions, so my cooking is my cultural and family baggage. But my grandma`s spanish cooking was great and I try to cook up to her standars and tastes.
My cooking triumphs
I mostly cook for friends and I have the honor of having great friends. Some times I have catered for their special ocassions recepctions, once for 300 guests and family gatherings. I have cooked for renown mexican artist,schollars, polititians and ambassadors. Most of them good friends. Cooking is always an opportunity to make new friends.
My cooking tragedies
mmm... some times things don´t turn out as spected, but nothing really you could not eat. Coc au vin made with an artisanal wine received as a present from a friend that turned out blue after cooked.... really rich deep blue! Not very pleaseant to look at it... but it wasn`t that bad to eat. We still have laughs about it!
