Banana Sour Cream Bread

Reviewed: Jul. 22, 2011
Very good recipe! I like to reduce the sugar by 1 full cup in the batter and add a 1/2 tsp. nutmeg and 1/4 tsp ground cloves. Then make a rum glaze (with Goesling Rum) and brush that on, OMG - that makes it a 5 star!

Ursula Higg's Bobotie (South African Casserole)

Reviewed: Jul. 22, 2011
This was an interesting and tasty dish, both sweet and savory. I have never had a Bobotie before and enjoyed the unique blend of flavors. I made the recipe exactly as called, using beef (which I browned along with the onion, not straining the juices). This will come out like a quiche when baked. It’s important to add more milk/egg to the mixture mostly covering it prior to baking (I should have added more than I did as it came out a tiny bit dry, but that was my fault). Curious about the Bobotie I researched it, happy to find similar variations of this recipe. The pictures of other Boboties also resembled this recipe. I will make again, except I may change the meat to ground pork to add a little extra moistness, or perhaps serve it with a simple risotto instead of plain rice.

The Best Lemon Bars

Reviewed: Sep. 29, 2009
Very good recipe. The crust was perfect. I did note that the "filling" was a little less than expected, next time I will make another 1/2. I also added LEMON ZEST (which I pureed) of two lemons and some yellow food coloring. EXTRA: I added about an 1/8 inch of melted RED SEEDLESS RASPBERRY JAM to the top after baking (to make it smooth & spreadable - it will re-congeal). This was a perfect wonderful flavor match! This recipe is definately a keeper!

Libby's® Pumpkin Cheesecake

Reviewed: Mar. 13, 2009
The best ever Pumpkin Cheescake! I find though that i always need to add a little extra cornstarch (1-2 TBS). And i find that adding a tsp of Cinn. & nutmeg to the crust gives it a little extra flavor.

Pesto Sauce

Reviewed: Mar. 13, 2009
Very good - I have an AeroGarden and had too much basil that needed using - this was perfect! It needed a little more garlic and the pine nuts are kind of pricey - I'd suggest buying them in bulk from Costco as it was the same price and I sooo much more for the $.

Guacamole

Reviewed: Mar. 13, 2009
Absolutely Amazing! I made a double batch for 8 people and was left with less than a cup. Even those who don't normally like guacamole were chowing it down. I made the recipe as called and put a little more lime on top to prevent browning. Thanks!

Roasted Red Pepper and Crab Soup

Reviewed: Nov. 21, 2007
This had a wonderful flavor and didn't overpower the crab. I made a few little revisions (used Chicken Stock instead of Broth, Reduced Fat Half & Half and Fresh Basil. I also used Creole pepper seasoning instead of the Cayenne). Was perfect and everyone is asking for the Recipe. It was a little pricy to make but well worth it. Will definately make again and again. Thanks

I don't know what I did, but it came out extremely dry, but it had a really good flavor to it. I would make it once more, just in case it was me.

Chicken or Turkey Tetrazzini Deluxe

Reviewed: Mar. 16, 2006
I found that the additional water was a bit too much liquid. I would suggest using 1/2 as much. Other than that, is a great dish!

Pork Chops with Apples, Onions, and Sweet Potatoes

Reviewed: Jan. 18, 2006
This was a very tasty dish and easy to prepare! I used a cast iron skillet (in the oven) to cook with sliced the sweet potatoes no more than 1/4 inch thick. I also reduced the pepper to 1 tsp instead of two and lightly sprayed the top (before baking) with a little butter. Excellent recipe & will definately make again!
