Kelsey's Favorite Stuffed Green Peppers

This is a keeper per hubby. I hadn't fixed stuffed peppers in a while and these were very good. Next time I will use mozzarella cheese instead of mild cheddar. Leftover filling looks promising for hard/soft taco filling plus sour cream or burritos. Will definitely make again. 5/1/2015

Baked Chicken and Stuffing

Ended up being a little too spicy for our taste but next time I will just use Cream of Chicken soup and leave out the Cream of Celery soup. That may help. Also, the stuffing mix has quite a bit of seasonings in it anyway. Easy to make.

Slow-Cooked Fresh Green Beans with Bacon, Onion, and Red Potatoes

This was good and I will make it again. Today I only had gold potatoes and that's what I used. Next time I will only put a small amount of garlic in this recipe. This was way too garlicky for me but my husband seemed to like it that way.

Tender Italian Baked Chicken

I rated 4 stars because I added a little garlic powder and crushed parsley to the mayo and cheese mix. I cooked in a glass baking dish. Next time I will take the advice and cook on a rack over a cookie sheet. It was really good and my hubby liked it too. He says it's a keeper!!!

Bottom Round Roast with Onion Gravy

This is the first roast that I cooked on top of the stove in a pot and it came out great. The gravy was excellent. I did use wine, rosemary, and thyme with it. I will cut the cooking time down a little next time. Hubby really liked the whole meal. Served with fresh steamed broccoli and mashed potatoes. This is a keeper!

Bacon Chicken II

My husband and I really liked this dish. I only cooked 3 brests, used chicken seasoning salt and ground pepper. I used about 1/2 cup of honey mustard barbecue sauce and 1/2 cup of honey barbecue sauce. I also like my bacon crispy so I fried 6/7 slices first. I also put a couple slices of onion on top of the brests first, then the sauce, then the crispy bacon (which stayed crispy) and cooked as instructed. I served it with corn and some candied carrots. Will definitely make again.

Cajun Chicken Pasta

I made this for dinner tonight and we liked it. I made it with wide egg noodles. Will definitely make again occassionally. It goes a long way and is filling.

Honey Ribs

Wow, what a terrific recipe. Served with lemon-peppered fresh green beans and fresh yellow squash and onions. Even, gave the recipe to a friend. My daughter said they were better than the ones they eat at Boush Gardens. (Must be good, huh?)

Chicken Alfredo

This was very tasty, however, it does not reheat very well. Very thick sauce next day for me. Plus using cream cheese made it heavier than I liked. Next time, I might try whipped cream or not use as much cream cheese. Other members of family liked it, though.

I made these a while back and everyone raved about them. Should have made more that time. I'm going to try these tomorrow but am using frying chicken legs this time. Also, will marinate them after putting all ingredients in a plastic bag for a couple of hrs. before I bake them.

Different Chicken Cordon Bleu

This is very, very good. I left out the wine, added 1cup regular milk to the soup and sour cream,sprinkled the dry dressing mix over the top, put pats of butter on top and drizzeled a little water on top. I also seared the seasoned chicken breasts in a frying pan to brown them a little before going into the oven. The chicken breasts were big so I had to cook the dish for about 1 hour. My husband loved it and I will be making this a lot more. Thanks.

Marie's Easy Slow Cooker Pot Roast

This was sooooo good! I did rub the roast with seasonings and a little flour before I browned on both sides. I also used 1 cup beef broth and 1/2 cup of water. I made a little gravy out of pan drippings and added at last minute to thicken. Will definitely be cooking this one a lot. Thanks.
