Tomato-Cream Sauce for Pasta

So yummy & easy. Even my picky kids ate it. My husband thought it was a bit too sweet, so maybe I will cut down the sugar next time. I doubled it. I did not saute the garlic & onions. But I used a can of diced tomatoes with garlic & onion and another can with basil, oregano & garlic. I put a little olive oil in and blended it since my kids don't like chunks. Then I followed the recipe as directed. I really like this and will use it often!

Baked Fried Eggplant

After baking them, I melted an Italian mix of cheese on them. Then I had warm marina sauce on the side and let my family eat them plain or with the sauce, instead of layering them like I usually do. My non-picky eaters liked it, especially my husband. One tip for breading them is to pour all the slices into a large bowl of flour. Use a spoon to coat them all. Then take them individually, shake off excess flour and put them in the batter. Once they are all in the batter, use a spoon to gently stir them around until all coated. Next, use a spoon or tongs, take them out individually, hold them over the bread crumb mixture. Using the other hand, use a spoon to dump the bread crumbs over each piece, then put it on the baking pan. This method is much less messy and helps so the bread crumbs and batter don't get all lumpy.

Ham Tetrazzini

This turned out great and I used my leftover Easter ham. I used half & half instead of water. I would suggest at least using milk (cream would be awesome). I added peas as well and did not have pimentos. I think sauteed mushrooms would be yummy, but my kids don't like them. I used angel hair pasta (a whole box) so next time I think I would either make less pasta or more sauce. Yummy, easy dish!

Easy Sugar Cookies

These were easy and very good. The only thing that didn't go so well was rolling them out to use with cookie cutters. Perhaps I needed to chill them longer than just an hour. Also they didn't make as many as I though they would.

Slow Cooker Chicken Cacciatore

Yummy - about 4.5 stars actually. I cut the recipe in half and cooked on high for 4 hours. You don't need very much sauce. I would recommend using half the sauce it calls for in the beginning. Then towards the end you can add more if needed, that way it's not too runny. Also, I added the mushrooms about 15 minutes before it was done, then they aren't mushy, just perfect. Another suggestion is to always just saute the mushrooms, onions and garlic (even bell peppers if desired) in olive oil and then top the chicken and sauce with it. Yummy dish, will make again.
