Yeast Waffles

Same recipie a good friend gave us. My husband, the "non-breakfast" eater LOVES them!! So do my kids. Me...I still prefer a good pancake (griddlecakes on this site are AMAZING). I will make them again for everyone else. Note: they do take a bit of forethought...not something you decide to make one morning for breakfast. Great, yeasty flavor and aroma!

Grilled Feta Tomatoes

These were good. Not very original, or "different" but they tasted good. My husband thought that they would be better if cooled and used on a sandwich...which is what he did. I would rather chop up the tomatoes and top a pizza with them and the feta. I did broil versus grill these...maybe that makes a huge difference.

Cream of Wheat Griddlecakes

Perfect Griddlecakes! Reminds me of those I had growing up. My husband said he liked them more than regular pancakes...my kids ate them down. I used "regular" cream of wheat...still turned out great!

Banana Cake Cookies

These were good... tasted like moist slices of banana bread. I would rather make the bread as it is quicker and easier to store. But the cookies were a fun try.

Rosemary Ranch Chicken Kabobs

I made this for a bbq. It was so good that by the time I got done grilling it...there was none left. So... I am just going by what everyone else told me :-) I did let them marinate an extra long time (2+ days in the fridge). Note: need to make more next time...and save some for myself!

Rotisserie Chicken

Very good. Made it without the butter and used skinned chicken. I let it soak in a salt water brine for ~2hrs before I seasoned and grilled it. With those changes, it was perfect for us.

Cinnamon Raisin Bread I

Made with part wheat flour. Turned out well... a bit dry. May have to tweek the baking time. I also added cinnamon directly to the dough and did not swirl it. Kids and hubby ate it up!

Eclair Cake

I had my kids make this (5 & 7) . It was easy for them to do (with help) and the results tasted great. I would not call this a "cake"...more of a pudding dessert (trifle?). Nevertheless, it is VERY yummy!

Key Lime and Pretzel Pie

The filling was great (used lime vs lemon). The crust...was good. I would make this again with a cookie crust. The pretzel crust seemed to get stale/soft after a day.

Slider-Style Mini Burgers

These were good. Everyone liked them. But there was really nothing outstanding or special about them. Nothing to make you say "wow...this is good." I may make again as the kids like them and they were easy... But I would leave out 1/3 of the cheese and the mayo...couldn't even taste it w/ all of the onion seasoning.

Potato Cheese Soup

Slow Cooker Enchiladas

These were good...not great. BUT they were easy...that is a plus. I didn't see the 45 min cooking time..so ours cooked for 5 hrs. The mixture turned into a "dip" that was mighty tasty. Not sure I will make again...the oven-baked variety are better.

Slow Cooker Carnitas

Husband loves Mexican food. And he LOVED this. So much so that he requested that I keep making it. I made per the recipe. The only change I would suggest it to place the meat on a rack (or balls of tin foil) to keep it our of the rendering fat.
