Tomato Chicken

This recipe was pretty good, but just a tad boring for me. My husband and I love flavorful food, and this was lacking a little. I served it over brown rice.

Spiced Quinoa

I loved this dish. It's healthy, delicious, and beautiful. I substituted the raisins and pine nuts for dried cranberries and toasted almonds since that's what I had on hand--soo good! This is one of my favorite recipes ever.

Refrigerator Bran Muffins

Easy and delicious muffins! After baking, I buttered them and sprinkled them with brown sugar, since I wanted a slightly sweeter taste. This recipe also makes delicious PANCAKES! My husband had the idea to use the leftover batter to make a pancake, so I tried it for fun, and it turned out wonderfully. Just grease a skillet and cook on med-high heat like you would normally do. The pancakes come out hearty and fluffy. Yum!

To Die For Blueberry Muffins

These muffins are delicious! The fresh blueberries make them so yummy, and the crumb topping is a perfect touch. I've also made them with fresh cranberries, which was fun and yummy.

Fluffy Peanut Butter Frosting

If you like peanut butter as much as I do, you will think this stuff is amazing...like I do! It is so creamy and delicious, and is great on brownies, cookies, ice cream, or by the spoonful!

Boilermaker Tailgate Chili

My husband made this chili and it was delicious! I am normally not a chili fan, but this recipe has changed my mind. After cooking the meat, he made it in our crock pot and let it slow cook for 6 hours, which I'm sure added to the taste. It filled our crock pot to the rim! It's also beautiful--many colors and textures simmering together. We recommend this highly!

Pumpkin Cheesecake Pie

This pie is delicious! I added about 1/3 cup of powdered sugar to the mixture to sweeten it up a bit (I had read some reviews that it wasn't as sweet as some other pies, and my husband and I like sugar!) It's true that it's cheesecake flavor is subtle. If you want a stronger cheesecake taste, you could add more cream cheese. I however, think the balance of pumpkin and cheesecake is perfect! Next time I will try baking it in one of those fantastic refrigerated roll-out pie crusts. You will enjoy this recipe!

Sticky Monkey Brains

This fun-named recipe was easy and absolutely delicious! It was a big hit at the bridal shower brunch I brought it to. I used a muffin tin rather than the small bundt pans, which worked great. Just make sure to use muffin liners and let them cool before taking them out of the tin. Thank you so much!
