About this Cook
My husband and I live in Colorado and thoroughly enjoy life together. He doesn't cook, but that's something I want to help him get into--I think he'd love it! I enjoy cooking and baking and love to try new recipes when I have the time. We both work full time and enjoy our jobs. We are planning on starting a family in about a year or so, when my husband finishes seminary.

My favorite family cooking traditions
My parents grew up in New Mexico, so we have some wonderful Mexican cooking traditions. On Christmas Eve, my mom always makes homemade green chili stew with buttered breadsticks, Posole' (hominy soup), and homemade tamales. Delicious!

My cooking tragedies
I once tried cooking rosemary-basted pork chops in the oven. The recipe said that the pork needed to reach 160 degrees before it would be done. So I kept checking the temperature with my instant-read thermometer, and the pork would not reach above 120. So I just kept cooking it and cooking it. Finally, after about an hour of being in the oven (twice as long as the recipe said), I decided that it MUST be done. The pork chops ended up shrinking down to half their original size, and had the consistency of beef jerky! But they still had a wonderful flavor, and my husband and I were able to laugh at my crazy mistake. :)

Tomato Chicken
This recipe was pretty good, but just a tad boring for me. My husband and I love flavorful food, and this was lacking a little. I served it over brown rice.

Tangy Slow Cooker Pork Roast
My husband and I both LOVED this recipe! It was so delicious and flavorful. Next time I want to try it with chicken.

Spiced Quinoa
I loved this dish. It's healthy, delicious, and beautiful. I substituted the raisins and pine nuts for dried cranberries and toasted almonds since that's what I had on hand--soo good! This is one of my favorite recipes ever.
