Crispy Rosemary Chicken and Fries

This is a good recipe, but I will have to make it again as written. Unfortunately, I followed the advice of some of the top reviews and doubled the topping. Personally, it was too much and I think it will be outstanding with the topping as written. I never like to alter the original recipes but felt compelled since so many had written that it needed more topping. More topping overwhelms the apples! Don't do it.

Four Cheese Macaroni

Made this today for guests to go along with ham. I wanted something different, and this wasn't it. I followed the recipe as written except for adding a tiny bit more cheese and cream. I cooked as directed. It looked beautiful, but I could see the look on everyone's face that I had just made a major failure in the kitchen. I always make a recipe as written for the first time, then modify it to suit my tastes thereafter. It's a costly recipe with all the cheeses, cream, and butter. Also, a very disappointing recipe. I don't believe that a recipe that needs SO MANY major modifications to be edible should have such a high overall rating. I will not be making this again. The rating is misleading on this.

Slow Cooker Beef Stew I

This is excellent for a stew made in the crockpot. I prefer mine made on the stove, but being a working mom I needed a quick way to put together a hearty meal. I made exactly as written and may make some minor adjustments next time I make it just to experiment. Some people made time consuming changes and that's fine, but the point of using the crockpot during the week to me is ease of preparation and cleanup. This is a keeper.

Cream Cheese Frosting II

This is the best thing I have ever tasted in my life. I could live off of it. I added a little more powdered sugar because I needed it to hold together a carrot cake wreck that I made, and it did the job perfectly. Next time I will make exactly as written and I can hardly wait. I imagine that it would be wonderful on pumpkin bread or bars.

Sam's Famous Carrot Cake

I don't even like carrot cake, but this was fantastic. I had several people tell me that it's the best they ever had. I am not a cake baker. Always afraid of the exact measurements concept, but I tried it, and it turned out great except I couldn't get it out of the pan. (I made it as a 2-layer cake) I ended up using a spatula and lots of nerves to finally get it free. I greased and floured the pans pretty liberally, so I don't know what the deal is with that. Maybe I cooked it too long. I don't know, but it was great. As other reviewers suggested, I used Cream Cheese Icing II from this site, and it covered up all the dents from getting it out of the pan. Really good together. I will make it again, probably soon, except I'll cut down on the pineapple. It's a very forgiving recipe.

Herb Roasted Turkey Breast

I made this exactly as written and the seasoning overpowered the taste of the turkey breast too much for my liking. I prefer an authentic "turkey taste" so this didn't do it for me. Completely changed the taste, but I'm giving it three stars because it was easy, moist, and my turkey-hating family members liked it.

Kay's Spaghetti and Lasagna Sauce

This is an excellent basic recipe. You can either do a lot with it by adding more spices, or you have make "as is" and it is wonderful. I left out the sugar, and added a pinch of baking soda instead, as suggested by another reviewer. What a great tip! If you don't like a real sweet sauce, but want to tame the bitterness, baking soda does the trick. I went with one onion and one green pepper, a bit heavier on the oregano, basil and garlic to suit my family's taste. I also used ground turkey in place of ground beef and it turned out great. Couldn't tell it was ground turkey, the family didn't know. Much healthier, and easier on the budget. I often make this substitution in meat sauces when I want to go lighter. Overall, this is an easy, versatile recipe.

Beth's Spicy Oatmeal Raisin Cookies

I am certain this is the recipe on the oatmeal canister except for the substitution of 1/2 c shortening for the butter, and the addition of the cloves (which I LOVE - the smell and the taste!). I am not thrilled that it's the same 'ole recipe and was looking for something different. I didn't use shortening though, so I'm giving this the benefit of the doubt and giving 4 stars. Maybe the shortening will make it great, but I'm thinking not. I will try again with the shortening, but using butter is just not enough of a change.

Pumpkin Bread IV

This is a great recipe!! The other pumpkin breads I have tried from here weren't very good, so I was hestitate to try this. I sure am glad I did! I pretty much followed the recipe except I reduced the sugar by about a 1/2 cup (still was plenty sweet, believe me), used less oil (maybe 1/4 c less), used 2 cans of pumpkin 14.5 oz, added an extra tsp of each spice, added raisins, and nuts. My oldest daughter is allergic to nuts but the rest of us love them, so everything I make I fill one pan with batter, then add a cup of walnuts to the remaining batter so we can all enjoy what we like. Been working like a charm for 17 years. I would give this recipe more stars if I could. It is the exact texture I like my pumpkin bread, not dry, but perfectly moist. Even after 3 days it was better than when it was first baked. Keep it wrapped tightly in plastic so it won't dry out.

Honey Baked Chicken II

I followed this recipe exactly as written and found it to be a very bland way to prepare chicken. (I always like to prepare the recipes as written the first time, then make adjustments as needed thereafter) We like spicy, thick flavors and this just do it for us. Had lots of leftovers. Will not make again.

Oatmeal Peanut Butter Cookies

The family sure liked these. Used shortening and stick of butter, no margarine used. Cooked 12 mins. A bit crunchy, will only cook 10 mins next time. They come out floppy, but harden up nicely. Other than the butter substitution, I made no other changes. They ran a bit which produced a thinner cookie than I like, so next time I will add 1/2 cup more oats.

Candied Chicken Breasts

Made this today for a quick, informal family get-together and it was way too sweet for my taste. Fortunately, I had another meat available. This recipe got mixed reviews depending on the age of the reviewer. The kids (teenagers) seemed to love it, with all the sugar. The adults were merely being polite, but I could tell it wasn't a hit by the amount of the dish left over. I give it 3 stars because I will probably make it again when I need something to do with chicken breasts quickly, and the fact that the children will inhale it with all the sweetness.

Apple Fritters I

This is was very tasty, but I added more nutmeg and 2 tsp of cinnamon and 1 tsp of vanilla. I used another reviewer's idea and diced the apples innstead of making rings. Was messy to work with but worth the effort.

Beefaroni

My family really liked this, I was ok with it. I used 1.75lb hamburger, 3 cloves garlic, 1 small onion, grill mates seasoning. Did not have tomato sauce so I substituted 1 can of diced tomatoes and 3 tbs of paste. Used 1 c. cheddar, 1 c. mozzarella cheese. Baked about 30 mins. Husband is now on 3rd helping.

Baked Potato Soup

My husband loved this. I substituted whole milk for the cream, and added about 1/4 cup sour cream. Also, added about 2T butter for the taste. Used 3 potatoes, smashing one up for added thickness. Used seasoning salt in place of regular salt. Will make for family again.

Cream of Coconut Cake

I needed a quick coconut cake recipe since I didn't have the 3-4 days to make my usual recipe. Thought this was it, sounded great and thought I could pull it off with all the wonderful tips from reviewers, and incorporated a few minor changes myself. Was quite disappointed. If you like a real strong coconut flavor in your cake, this recipe is not for you. Even though I added coconut extract to the mix, and cream of coconut to the frosting and covered the layers with flake cocnut after frosting, it still only slightly resembled a potent coconut cake. It's a good idea, and very simple to put together but I will probably not make this again. I give it 3 only because the frosting was tasty.

Rum or Bourbon Balls

First of all, I have never made rum balls before and made this recipe exactly as written. No one seemed to care for them, but with other suggestions listed, I believe I could put together something that tastes better. They have way too much rum for my taste and were gritty from the undisolved sugar. Cutting down on the rum and perhaps using Captain Morgans may help with that, and disolving the sugar in the rum will help the gritty taste. Also, adding rum soaked raisins is a great idea and will do that next time. But, IMO this recipe as written is not great.
