Italian Meatball Sandwich Casserole

We liked it but this won't make it into the regular rotation due to the fat and calories. I used turkey meatballs and subbed the mayo for low fat ricotta.

Slow Cooker Stuffing

I made this last Thanksgiving and my family decided that I am in charge of dressing anytime we have a turkey. I love that it frees up the oven. I change it up a bit every time - toasted pine nuts, diced apple, bacon, dried cranberries... This is a basic recipe that can be easily customized. I do recommend using the tea towel under the lid of the slow cooker to keep the dressing from getting soggy. Try it - you won't regret it

Thai Chicken Curry with Pineapple

Definitely increase the curry paste/powder. I would advise leaving out the frozen peas and sub them with fresh snow peas or bamboo shoots. The peas dont seem right for an authentic thai dish.

Chicken Breasts in Caper Cream Sauce

This is an amazing, simple recipe! I added sliced mushrooms with the chicken, and felt like that really put this sauce over the top! I served it over orzo pasta so we could enjoy all the sauce. My fiance loved this dish and told me it needs to be part of our regular menu.

Chicken Makhani (Indian Butter Chicken)

Quite disappointed in this recipe, made exactly as written, except instead of cornstarch I used ground cashews as suggested by a reviewer. I found this quite bland, missing a lot of what makes butter chicken so good. I went on an indian food site and found a much better and authentic recipe.

Cucumber Sunomono

I love anything with ginger in it, this is a great twist to the traditional marinated cucumber salad. I didnt de-seed my cucumber, since I like the seeds. This one will be getting made over and over in my house!

Everyone really enjoyed this dessert. Used Low fat cream cheese and whip cream to make it "healthier" I would definitely make it again. I halved the recipe, and half fits great in a pie pan.

Cheesy Tuna Lasagna

I added fresh sliced mushrooms to the onions when sauteeing, just to make it a bit "meatier" I really enjoyed this dish, and it was quick and easy to make after working all day. I used low sodium tuna, low fat cream of mushroom soup, 1% cottage cheese and low fat mozzarella cheese to make this a 'clean eating' meal, and even after doing all of these healthy changes, it still tasted amazing! I dont feel I sacrificed the flavor at all. A new favorite, will definitely make again!
