Pecan Pie V

This is my favorite pecan pie recipe I've ever tried! I made this for Thanksgiving and it was wickedly DELICIOUS! My family loved it and I will be making it again for Christmas! For the main pie, I used a frozen Marie Callender's deep dish crust, but I had a little filling left over put that into a quick graham cracker crust in a mini skillet. I didn't wish to be wasteful! I'm not sure which crust was more delish!! It gave us a sample the night before the big meal and I hope I always have more filling than I need!

Garden Chicken Stir Fry

Delicious as is. No need to change a thing. For all those saying it is bland, I don't agree. The natural flavors of the vegetables combined with the chicken is quite nice. The wonderful thing about cooking is that you can spice it up if you would like to.

Spinach and Strawberry Salad

Eating my 2nd plate, holy cow! I was completely skeptical, but this is so slamming that my keyboard is going to need a cleaning after this rate session! YUMMO! :) I did cut back on the sugar (2 T sugar + 2 T honey) but as is was awesome! Will serve dressing on side, as I don't like as much. Thank you! Glub glub, yummy!

Yum! You can vary your vegetables, but it is so tasty as is! Served with crusty hot bread and a salad and you have a nice winter supper...comfort food!

Orange White Chocolate Chip Beltane Cookies

as is, 3 stars. I added more zest and white chocolate chips, almost doubling quantity AFTER trying original recipe. I also added orange juice from the fruit I was zesting since the batter was sooooo thick and somewhat difficult to manipulate. After sampling the baked product, I followed some reviewers' advice and mixed up a glaze of powdered sugar, orange juice and a dash of vanilla extract to top the cookies. I used this to frost 1/2 the cookies lightly. I melted 1/2 cup white chocolate chips in a bowl in microwave and mixed in a drop of red food coloring and a drop of yellow, drizzling over the other 1/2 of the cookies...all were gobbled up. :)

Hash Brown Casserole II

Yummy! I only had cream of mushroom, so I used it with great results. You could play with the type of cheese you use and adjust the salt to taste. I think next time instead of frozen hash browns, I'll dice some red potatoes and parboil them. And to be honest, the cornflake topping is not necessary! Thank you for a tasty recipe!

Balsamic Roasted Pork Loin

Delicious and moist! Family enjoyed it very much. I cooked it to 145 degrees and let it sit for 10 minutes and it went to 150 degrees, which was perfect! Thanks for a great recipe!
