Spinach and Strawberry Salad
Eating my 2nd plate, holy cow! I was completely skeptical, but this is so slamming that my keyboard is going to need a cleaning after this rate session! YUMMO! :) I did cut back on the sugar (2 T sugar + 2 T honey) but as is was awesome! Will serve dressing on side, as I don't like as much. Thank you! Glub glub, yummy!

Italian Sausage Soup with Tortellini
Yum! You can vary your vegetables, but it is so tasty as is! Served with crusty hot bread and a salad and you have a nice winter supper...comfort food!

Orange White Chocolate Chip Beltane Cookies
as is, 3 stars. I added more zest and white chocolate chips, almost doubling quantity AFTER trying original recipe. I also added orange juice from the fruit I was zesting since the batter was sooooo thick and somewhat difficult to manipulate. After sampling the baked product, I followed some reviewers' advice and mixed up a glaze of powdered sugar, orange juice and a dash of vanilla extract to top the cookies. I used this to frost 1/2 the cookies lightly. I melted 1/2 cup white chocolate chips in a bowl in microwave and mixed in a drop of red food coloring and a drop of yellow, drizzling over the other 1/2 of the cookies...all were gobbled up. :)
