Chocolate Zucchini Cookies

yum! Chocolate that is halfway good for you! I made a few minor changes. I used 1 3/4 cups of whole wheat flour and 1/2 cup of old fashioned oatmeal. I added a teaspoon of cinnamon because I think it helps bring out the chocolate flavor. And I had to have walnuts, too. I halved the baking soda as other reviewers suggested and the cookies were still fluffy and very cakey. I think frosting would be an excellent addition, too, if you don't mind the fuss and extra calories. I'll definitely make this again.

Strawberry Romaine Salad I

very good! I made a few minor changes. I used Miracle Whip instead of mayo and black raspberry infused white wine vinegar. I used part Splenda and part sugar, too. I added feta cheese and bacon bits to the salad. I will definitely make it again.

Amish Meatloaf

The whole family liked this one with minor changes. I used half the onion because we don't like onion overpowering meat flavor and about 1/3 of the sauce that goes on top. I used oats instead of crackers. I also substituted half of the ground beef for ground venison just because that is what I have on hand. This will become my go to meatloaf recipe!

Ham N Egg Skillet

We love breakfast type recipes for supper. This was great ~ fast and easy and inexpensive. I use red potatoes and don't bother to peel them. My husband prefers Velveeta cheese, so I used a couple slices of that. I also used a dozen fresh eggs, medium to large size, just because I had and abundance of eggs and wanted to get them used up. I put about 1/3 cup of water in while beating the eggs to make them fluffy. My family wants this to be a regular on the menu!

Very Berry Cheesecake

Fabulous! I added another half to the recipe to fill my 9 inch pan. I also used frozen black raspberries. I baked it for 40 minutes in my convection oven (no water bath) and then just let it set there in the oven for another 2-3 hours. It was done perfectly and no cracks! I took it to a church function and everyone raved about how good it looked and tasted. I will definitely use this recipe again.

Turkey Tetrazzini II

Best tettrazini ever! was what my family said! I changed up a couple of things. I put a wee bit of garlic in the butter with the flour. I used whole wheat spiral noodles since I was out of spaghetti noodles. I substituted one of the cups of milk for another cup of broth. I put some buttered Italian bread crumbs on top for some crunch. I served peas alongside. There was just three of us and we had leftovers. The leftovers didn't last long! We loved this recipe!

Great-Aunt Nina's Noodles and Chicken

Macaroni with White Sauce

We really liked this recipe! Instead of ground beef, I used ground turkey and I used less noodles so that it was really creamy. For a finishing touch, I added a dash of nutmeg to the sauce. I'll definitely make this again.
