Pumpkin Pancakes

I really liked them. Sadly, my kids wanted their "regular" pancakes instead. I used two eggs and left out the vegetable oil. I also cut back the allspice to 1/2 tsp because I think it can overwhelm the cinnamon.

Grilled Peanut Chicken

I should have read the directions more carefully - I put the sauce on both sides before grilling, and the first side was more burnt than carmelized. Still good, though! I left out the curry powder and cayenne because my family doesn't like spicy food.

Florida Strawberry Muffins

Very good. Accidentally melted butter instead of softening, but it still worked. Used just 1/8 tsp nutmeg. Watch at the end - mine got a little overcooked.

Chicken with 40 Cloves of Garlic

Good! Instead of adding water, I squeezed a whole lemon over the chicken and put the rinds into the chicken cavity. Had to uncover the pan and cook a bit longer than 90 minutes. Forgot the thyme. Pre-browning makes chicken look good!

Potato, Broccoli and Cheese Soup

Great soup. I used canned chicken broth instead of water and bouillon cubes. I threw frozen broccoli in after the potatoes had cooked for a few minutes. I also only used about a cup of cheese and sprinkled it on the top to make an orange swirl on the bright green soup. Pretty and delicious.

White Cake Frosting I

Egg and Hash Brown Pie

Very good. I fried up the hash browns and green onions a little bit in a cast iron pan, added some black pepper, then poured the egg and cheese mixture on top. I used Parmesan and Emmentaller cheese, then sprinkled a little colby-jack and 3 slices of cooked bacon on top. Cooked in same pan in the oven about 15 minutes. Very good. A little bland, but that's how my kids and husband like it.

Hash Brown Quiche

Very good! I made my own hashbrowns by shredding 4-5 medium potatoes. They filled my pie plate quite well. To reduce fat, I sprayed with cooking spray to brown them instead of using butter. Perhaps because I had lots of potatoes, I found 2 eggs to be enough (could have fit one more) but I must admit I eyeballed all measurements except the milk so I may have used extra ham and cheese. My husband and I both enjoyed it very much. My kids liked the filling but not the hash browns. With some fruit on the side, it made a nice, easy lunch.

Scalloped Potatoes and Onions

Very good! I started slicing potatoes for another recipe, then realized I didn't have cream of chicken soup. I switched to this recipe, then noticed that it needed to bake 2 hours and it was 5:00 when I put it in the oven. So I cranked the heat to 375 and cooked it for a little over an hour. The potatoes were tender and tasted great, but were still white. I'll reheat the leftovers tomorrow to get that great brown crust. I followed the original recipe except for adding a bit of cheddar cheese on top at the very end. I was surprised how rich the sauce tasted despite having no cream and very little butter. I'll definately make this again!
