Spinach Stuffed Chicken Breasts

Reviewed: Feb. 14, 2006
LOVE IT! With 15 minutes left for the chicken to cook, I took it out of the oven & topped it with a couple of sundried tomatoes & a little bit of parmesean cheese, then put it back in the oven. It was simply divine & my husband loved it!

Jambalaya

We loved it! So easy. I took the advice of the others & cooked the rice seperately...worked out well. We like spicy food, so I added about 3 times the amount of red pepper as the recipe called for.

Carrot Cake

Reviewed: Apr. 4, 2006
The cake was phenomenal. So moist & flavorful. I baked two layer cakes...one for my husband's office & one for my office. I only had enough icing for one cake (and that was after doubling the recipe), so I used the Betty Crocker Cream Cheese Icing on the other cake. I have to say, Betty's is better! The icing recipe here was too sweet (even for MY taste!) & the texture wasn't thick enough to stick to the sides of the cake. I ended up with icing dripping off the sides of my cake plate & it didn't make for a nice presentation. If you make this cake, try to find a different cream cheese icing recipe. But the cake is the best carrot cake I've ever had! This will be a recipe to hand down to future generations!

Lemonade Cake II

Reviewed: Aug. 1, 2006
REFRESHING! Such a wonderful cake on a hot summer day. I modified the recipe by making it into a layer cake & adding Betty Crocker lemon icing after it cools completely. It lasted about 5 minutes on the table at work. Everyone raved about how good it was!

Smothered Filet Mignon

Simply delicious. I added more pepper & a few mushrooms. I think my husband is now jealous that I can make a better steak than him!

Beef Tenderloin With Roasted Shallots

Reviewed: Sep. 2, 2008
I made a 3 lb tenderloin for a small dinner party and everyone raved about the flavor. The sauce was very good and the recipe could easily be used for a different cut of meat such as a pot roast for a more casual, inexpensive version. I served this recipe with roasted red potatoes and baby squash, carrots, and zuchinni seasoned with garlic, herb butter, sea salt & cracked pepper. Simple recipe & is on our Christmas menu for something different! I did not have bacon on hand, but as my grandmother taught me, I always keep bacon grease in the fridge to add flavor. So I used it in the pan to sear the tenderloin. The bacon was not missed from the sauce.

Creamy Butternut Squash With Cinnamon Soup

Reviewed: Oct. 29, 2008
This soup was so tasty! There were so many flavors at one time. To quote my husband, "It was like a flavor explosion in my mouth! It was the best soup I've ever had!" LOL Quite interesting! It took a couple of spoonfulls to get into it though. Mine didn't get thick enough, so I added corn as a bit more substance. Not sure it helped, but it did add more flavor. It was good the first day, but wonderful the second day after the flavors had a chance to really settle in. Will definitely make it again.

Calypso Turkey Tenderloins

Reviewed: Feb. 26, 2006
It was ok...I think the cloves kinda overpowered the taste of the turkey. It probably didn't help that I left it marinating for two days. We may try it again.
