I made a 3 lb tenderloin for a small dinner party and everyone raved about the flavor. The sauce was very good and the recipe could easily be used for a different cut of meat such as a pot roast for a more casual, inexpensive version. I served this recipe with roasted red potatoes and baby squash, carrots, and zuchinni seasoned with garlic, herb butter, sea salt & cracked pepper. Simple recipe & is on our Christmas menu for something different!
I did not have bacon on hand, but as my grandmother taught me, I always keep bacon grease in the fridge to add flavor. So I used it in the pan to sear the tenderloin. The bacon was not missed from the sauce.
