Golden Yam Brownies

these were really excellent! didn't use the glaze since they were already so sweet and moist. took advice of another reviewer and cooked the yams in the microwave, skinned, then pureed in the food processor. i also added a handful of chopped pecans. MMMMM!!! thanks for sharing

Candi's Chocolate Peanut Butter Chip Cookies

these were really tasty. i realized more than halfway thru the recipe that i had no eggs! so, i grabbed a ripe banana and used that as a binder instead. wow! you can taste the banana in the cookie, and my husband said it "would have been Elvis' favorite"! thanks for the recipe :)

No Roll Pie Crust II

i appreciate the fact that this is an easy, quick, no-roll crust. unfortunately, i was unhappy with the taste. i find no fault with the recipe, though; it's simply a matter of taste, i guess.

wonderful, wonderfuk, wonderful! like another reviewer, i did not roll the enchiladas but layered instead. also,i happened to beout of sour cream, so used 4 ozs. of cream cheese instead.

Spinach and Red Chard Quiche

i thought this was very nice. i am trying to incorporate more soy into my diet, and this recipe is a keeper. i confess, i made it with a combo of tofu & egg (i was worried about the consistency, as some reviewers mentioned), and with a combination i thought it was very good! thanks for adding a completely different recipe to my repitoire!

Strawberry Vanilla Pancakes

very tasty. i made some modifications based on other reviews plus a change or two of my own: 1-1/2 T oil (vs. 2), 2 t vanilla (vs. 2 T), 1/2 t salt (vs. 1 t), 1/2 t cinnamon, 1/2 C milk & 1/2 C soymilk (vs. 1 C milk), 1/2 C strawberries & 1/2 C blueberries (vs. 1 C strawberries). i'll definitely make again!

Hot and Spicy Tofu

this was absolutely fabulous. the only thing i changed was rather than 3 T soy sauce, i used 1-1/2 T soy & 1-1/2 T worcestershire. wah-hoo, that's tasty beef!!!
