Extreme Chocolate Cake
Very impressive as a birthday cake for a chocoholic! It was very moist and fluffy -- not dense like so many other chocolate cakes that I've tried. I took another reviewer's suggestion and substituted espresso for some of the boiling water. It did stick to the pan even with greasing and flouring, so I will have to try the parchment paper next time. I also ran out of confectioner's sugar (oops) so used a stovetop chocolate frosting recipe instead of buttercream, which was delicious. This will definitely be my new go-to chocolate cake recipe!

Pumpkin Pie Muffins
These were very good...very, very moist -- almost too moist for me, actually, so I have to remember to keep them in the oven longer next time. I would also like to try adding all whole wheat flour and a little less sugar. The recipe makes a lot, so it's definitely a good one to bake for friends and still have some left for yourself!

Vegetarian Tortilla Soup
I didn't have everything that the recipe called for, but it was a great last-minute dinner even without the full amount of peppers, green chiles and avocado. I would love to try it next time with the right proportions and the additions that some reviewers have made: 2 cans of black beans, some lime juice, cilantro, and maybe some sour cream (and I added about a 1/3 c. beer, which was lovely!)
