Mouse's Macaroni and Cheese

Used a 12oz box of elbows, added some diced ham, about 12 oz cheddar, 4 oz American and added a few dashes of garlic powder, onion powder and a punch of cayenne for my own taste. Was GREAT, so I think the ratio of macaroni to cheese is definitely high like other reviewers said, but GREAT recipe!

Meat-Lover's Slow Cooker Spaghetti Sauce

100% what we were looking for - a meatier spaghetti sauce. We did the store bought for awhile, but never liked them and decided to do our own knowing we wanted more meat. Used ground turkey in place of the beef and left everything else the same. GREAT sauce. Double it and put it in our slow cooker and keeps our family of five with sauce for a couple of months at a time. GREAT flavor/taste!

Asparagus, Chicken and Penne Pasta

Fantastic! Made just as is (for the most part) and it turned out great. Cooked the chicken with same seasonings as the asparagus. Hubby said he preferred the asparagus a little softer (boiled, vs. sauteed) but I thought it was great as is!

Luck o' the Irish Brownie

These things are DANGEROUS! SO very good! Made them for my 4 year old's preschool St Patty's party, sent in a bit more than necessary and I know there were a few missing - the teacher who hasn't in the past eaten my stuff complimented me on these!! Made them just yesterday and they were gone by today - ALL 36 of them! If there were more than 5 stars, this would qualify! Followed it all the way through (even with the original chef's notation to cook the topping layer instead of microwaving it) and while it was a bit lengthy, completely worth it!

Flourless Peanut Butter Cookies

For the amount of sugar you add, I thought it would be sweeter. I did a double batch, 1/2 cup brown sugar, 1 and 1/2 Splenda (to cut on calories, other Splenda deserts have been just as sweet as originals, so I doubt this was the problem). They were good though. I forgot to roll balls for the first batch which came out kind of deflated looking, a little hard to get off the wax paper I used. After that, I did the balls and they came out fine. I did (I kid you not) 60 smaller sized cookies. About the size of a 1/2 dollar coin, maybe a bit more. For the second 1/2 I added about 1/3 cup chocolate chips (semi-sweet) into the remaining batter. Good cookies, not sensational, but definitely good.

Honey Cupcakes with Strawberries

VERY good! Came out great. I made them in a mini muffin tin and had 42 mini cupcakes! I changed the frosting slightly by adding a package of cream cheese to make it more sturdy/thicker (as per the whipped frosting recipes on here). Added tiny bits of strawberries straight to the "frosting" and they came out fantastic! You can taste the honey in these for sure! Mine ended up like mini strawberry shortcakes.

Oatmeal and Applesauce Pancakes

Great! Don't make the pancakes too big or they will fall apart as you try to turn them. They stay nice and moist inside though! I took the advice of the other posters and use 2/3 oats, 2/3 whole wheat flour (blended the oats a little bit) and used a little extra milk to thin the batter. Forgot the vanilla by accident! But it was great. Added a chopped apple too. Yum!

Angel Chicken Pasta

Very good. I was looking for a shrimp pasta recipe, but feel limited when I add the shrimp for looking, so I just put in pasta and found this one. VERY good with shrimp too. I just did the sauce on the stove and added the shrimp towards the end. Use cream of mushroom because it was all we had and reg cream cheese with added chives (again, all we had). Could use a tad more liquid (either in wine or broth form), but still VERY good. Added some chopped tomatoes and some mozzarella cut up on top, a sprinkling of parmesan.

Warm Chicken Ranch Wraps

Very good. I wasn't sure about the warm rice with lettuce, but I gave it a shot. Added some cheddar and used chicken broth both to cook the rice and mix the rice chicken and ranch together. Much more flavorful than water. I also added a little bit of garlic with the chicken while it was cooking.

Rich Chocolate Frosting

Definitely YUM! I made only 1/2 of the recipes and still ended up with WAY MORE than needed to frost 2 8x8 cakes (including one with filling). The birthday girl ran around with a beater for 1/2 an hour or so because she loved the flavor so much!

Cheeseburger Noodle Casserole

I was in a rush and this was a good meal. I skipped the oven part and just mixed the cheese directly in with the sour cream and tomatoes to smooth it out. I thought it tasted great this way. I also didn't have the soup mix, so I just used dried onions. I mixed the onions, garlic (I used cloves) and basil right in with the meat while it was cooking instead of waiting for the rest of the stuff to be mixed together - as I said, I was in a rush. This was quick and easy. The dish tasted great in my opinon. Probably would have been that much better had I been able to bake it, but then again I do like my cheese mixed in instead of as a topping.
