Irish Soda Bread

Really great! used the dried buttermilk and water. I forgot to add the water with the wet ingredients and had to remix it in after i had put it in the pan, but it STILL came out great! I used a 9x5 loaf pan and the middle is a little underdone after 65 minutes. Texture is definitely gooey like cookie dough.

Best Brownies

Delicious brownies. I've made them as is, and doubled them, and always come out great. Watch them so they don't over cook to keep that gooey-ness. One time i did double them and remember someone saying only use 3 eggs when you double....they DID NOT come out as good, and very dry and cakey. Spring for all 4 eggs. We love them with "Brownie Frosting" recipe which is like adding a layer of fudge on top!

Broiled Tilapia Parmesan

Delicious! Made it pretty much as is, adding just a sprinkle of old bay & garlic powder and it was SO GOOD! 8 year old loved it and he can be picky, and 2 year old wouldn't eat it at first, but later took a few mouthfuls. Suprised by the lemony-ness, in a good way. Halved the recipe over 3 good size filets and it made plenty of extra sauce for the 3 of us.

Cranberry Pumpkin Muffins

Big hit! I too cut the sugar to 1 cup, and did 1/2 whole wheat flour, and they came out great! I didn't chop the cranberries, and they were definitely pockets of tartness, if you like that. I only used the one cup of pumpkin, and it's annoying to have 1/2 a can left, so i might just make a 2nd batch! The texture was very cakey and rich, but not greasy feeling ( i decided to leave the 1/2 cup oil as is to see how they came out) My 7 year old loved them, and even the super picky teething 18 month old took a bite or too and he just doesn't do carbs. So thumbs up all around!

Pumpkin Chocolate Chip Muffins

made as is except used 1/4 applesauce and 1/4 oil ( i doubled the recipe) and was pretty heavy handed with the spices (a shake of ginger too) Delish!

Baked Teriyaki Chicken

Definitely adding this to the weekly repetoire. I made the recipe as is only with 4 bone in chicken thighs for my little family of 3. I wish i had more chicken because everyone was asking for 2nds (including my 6 year old) and leftovers would have been nice. Perfect amount of sauce for the 4 pieces. We drizzled it over brown rice. When i make it again with more chicken i may double the recipe just to have more sauce. DEFINITELY use foil on your dish for easy cleanup. Also my thighs were on the small side and i don't think they took the full hour to cook.

Granola Energy Bars

Made these to add some fiber to my diet. I did have to substitue a little, but i thought the flavor was great, and great crunchy texture with the seeds. The flax seed i had was ground, i used wheat bran instead of oat bran, and i didn't have any wheat germ so i used quinoa flakes (the kind you add water to for instant cereal). I also just sprinkled the choco chips on top, let them melt a little and then smeared them. Very tasty, my only complaint was how crumbly they are. Very messy. But this could be from the quinoa flakes that would have sucked up some moisture. Curious if anyone else had a crumbly problem. All in all, i'd make these again, maybe add a dab of applesauce for moisture. And my 6 year old loved them and ate one with his Pops this morning!

Shrimp Scampi ala Norelllaura

Very good. Only thing i did differently was use more like 6 or 7 cloves of garlic since i like garlic, and i only had an orange pepper, so used it instead of orange. Left out the red pepper flakes and added salt and pepper to taste. My 6 year old said when i told him what we were having "i'm only going to eat the shrimp" but then he gobbled up the pasta too in the sauce and like 10 shrimp! So 2 thumbs up for kids - as long as it's not spicy.

Best Chicken Ever

very good! i used 1/2 cornflakes and 1/2 frosted flakes (1 tiny box each from those sample packs you get) added garlic salt, salt and pepper, and some bread crumbs to the crust mix. my 3 year old helped me 'paint' the chicken with light sour cream with basting brushes! I might add a little more garlic salt or regular salt next time, and i also left off the butter.
