Eggplant Parmigiana Caponata

I made this last night and OMG at first I thought it was too vinegary but after a few bites I couldn't stop eating it! Like many others I left out the sugar and the capers and anchiovies but I will try them next time. So good!

Kimberly's Meaty Meatloaf

just made this meatloaf for dinner and I did everything exactly except I put in a little bit of garlic. I used my homemade tomato sauce. It was THE best meatloaf I've ever had and my family agreed. We think its because of the tomato sauce instead of ketchup. Thanks for the great recipe!!!!

all I have to say is YUMM. I added some fresh parsley as a Filipino friend does. I think next time I may add a bit of chopped cabbage too.

Marinade for Chicken

I got this exact same recipe from tastes of home magazine as a lamb marinade and let me tell you..when I have a bbq people call ahead to ask me to make the bbq'd lamb..it is so good and you can use it for any meat really.

Jeera (Cumin) Rice

my good friend who is Indian gave me a wonderful cumin rice recipe a few years ago I make it regularly. In her recipe a scrambled egg is mixed in and if you like a few peas it is delicios!

Mulligatawny Soup I

I have made this many times and have turned alot of people on to this soup. I love it!!!! The last time I made it I added some chopped up turnip and a chopped up yam to it and it was sooooo good.

Baked Fish and Rice

This was sooo good. I used Garlic Plus seasoning instead of the Italian and garlic salt. I added a dash of Old Bay Seasoning and I used thawed stir fry veggies. I also used more fried onions than called for. My husband and daughter loved it. I will definately make this again, I may even try it with jumbo shrimp next time!

Crustless Spinach Quiche

I made this recipe yesterday and I thought it was great. Next time I make it I will probably add a few more veggies and maybe top it with a few french fried onions to give it a crunch I loved it!

Sesame Shrimp Stir-Fry

I haven't tried this recipe yet but I do make a ton of stir frys and noticed some people had a problem with the prep time. If I am in a real hurry I find that there are good quality frozen stir fry veggie mixtures which I use. It cuts prep time significantly. Just a thought.
