Angel Hair Pasta with Shrimp and Basil

This is a great recipe! I used bay scallops instead of shrimp because we already had shrimp for dinner this week. The scallops turned out great. I used minced garlic and sauteed the scallops until they were a golden brown. The hubby was happy with this one. We'll make it again. Thanks!

Almond-Topped Fish

This is fantastic! We used Cod. The fish would have been great with or without the almonds. We sauted the almonds in butter and then put them on top of the fish during the last 10 minutes of cooking. MmMmMm! We will definitely make this again, but next time I'm going to try it with salmon and no almonds. The sauce alone is to die for! We served it with cous cous and lima beans. Thanks!

Texas Stuffed Grilled Burgers

My husband and I made these over the weekend for my parents, and we altered the recipe just a bit. We left out the ham since we're not fans of it, and replaced the cheddar cheese with swiss. We sauted the mushrooms and onion together with a lot of minced garlic (YUM!) and then placed the mix in between the patties with a bit of shredded swiss. Then after the burgers were done, we put swiss singles on top... YUM! I couldn't find hickory seasoning, so we used Mrs. Dash's hamburger seasoning to cut back on the sodium and it was quite tasty. My dad is usually the burger grilling king and is picky about his burgers, and he scarfed his down! We will definitely make these again. They are a lot of work, but SO worth it. Next time we're going to try stuffing with Rotel tomatoes with green chillies, jalapenos, and pepper jack cheese!

Greek-Style Rib Eye Steaks

This was AWESOME!!! We were out of olives, so instead I sauted some mushrooms and also put fresh, diced tomato on top. I also used the crumbled feta cheese with sundried tomato and basil seasonings. YUM-O! This entire combination would be excellent in a salad with some avocado, sauted onion, and a light blue cheese dressing.

Maria's Stuffed Chicken Breasts

This was very easy and tasty, but I didn't understand why it only called for salt and pepper... thus, I used an Italian Seasoning mix. Also, I cut the recipe in 1/2 for 3 large chicken breasts and it still made WAY too much stuffing... I'm saving the rest for stuffed shells next week. At least the hubby was happy and asked me to make it again. Next time, I'll add mushrooms!

Sauteed Scallops

This was very good. I used minced garlic, and added dill weed and lemon pepper to the mix. While the scallops cooked, I constantly spooned the butter and garlic mix over them. It took a lot longer than 2 minutes per side to cook... but I had the jumbo scallops. I served with steamed sugar snap peas and white cheddar shells and cheese macaroni. I will definitely make this again!!

Peanut Butter Apple Dip

I made this for a cookout and everyone RAVED about it! The first time I made it, I didn't have an electric mixer, so unfortunately, it didn't come out properly... after a little trip to Target, the dip came out perfect! You must use a mixer to blend everything properly. This recipe is definitely a keeper. :) People were eating it by the spoonfulls! Thanks!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

This was very good! The only alteration I made was using an Italian Seasoning mix. Just using salt and pepper didn't seem to make sense for something like this. It turned out very good and we also used cheese-stuffed tortellini instead of ravioli. When we first started eating it, we felt something was missing... then I realized I forgot to put a little parmesan on top. Boy did that make a huge difference! Once we added it, it was perfect. :) Both my hubby and I have left overs for lunch today! We will definitely make again. Thanks!

Lemon Rosemary Salmon

This was fantastic! I added garlic salt though (couldn't possibly leave that out!). I also baked it in an 8x8 glass dish and around the salmon, placed baby asparagus. I drizzled the asparagus in the same ingredients as the salmon, adding lemon juice and a little black pepper... I let it all bake together and it was AMAZING! I served the salmon on a bed of white rice. The hubby was a very happy man with this recipe. Plus, it looks great on the plate! I will definitely make again!

King Ranch Chicken Casserole III

This is an absolute favorite in my house! My husband scarfs it and brings it to lunch over the next few days afterwards. Rotel tomatoes are the only way to go with this recipe, and a few dashes of hot sauce adds a nice kick.

Maple Salmon

This is a FAVORITE in my house!! This recipe is perfect every time and very easy to throw together. I have made it several times and my hubby always asks for more. It's excellent served on a bed of white rice and a side of sugar snap peas.

Broccoli Chicken Casserole I

We used chicken flavored stuffing and it was awesome! I also seasoned with a little garlic salt, black pepper, and parsley. Also, to cut down on time, I used Tyson's diced chicken... 3 packages of it is enough for a 9x11 pan. We also replaced the cream of mushroom soup for the broccoli cheese soup and it was AWESOME!! We've made this twice and both times it turned out great!

Crab and Swiss Quiche

This was my first attempt at a quiche. It tasted yummy, but something just wasn't right... I had to cook it double the time on the recipe and have no idea why. I followed everything exact... but it came out really watery in the middle so I had to double the cooking time. Maybe too much egg? Not sure what the problem was... I also don't understand why there aren't any seasonsings listed. I added a little bit of black pepper and garlic salt.

Key West Penne

This dish is good, but it was almost like all the different ingredients were trying to stand out the most. There are so many distinct flavors in this recipe, it's almost an odd experience to eat, but I liked it! I followed the recommendations and sauted some garlic before hand, and added garlic sald and pepper to the recipe for a little seasoning. I'll make this again, but probably alter it a little.

ANZAC Biscuits with Almonds

Somehow, I managed to mess up the recipe and the cookies molded into one giant cookie in the oven and it looked really gross. However, I brought the mass cookie to a college class for a presentation to prove that I tried, and everyone LOVED the flavor. The cookie was not attractive, but DELICIOUS none the less and a hit! The dough itself is wonderful before it's baked. Just make sure you follow the directions exactly and hopefully you'll have better luck. :)

Cherry Chicken Lettuce Wraps

I think this is an awesome dish. Try using dried cherries since they are available year-round. Also, try putting the mix in pita bread instead of lettuce. The lettuce just falls apart and is very messy. This dish is delicious when served with white rice.

Chicken with Asparagus and Roasted Red Peppers

This is such a delicious and easy recipe! I substituted the balsamic vinegar with a balsamic vinegar salad dressing that also had sundried tomato and roasted red pepper flavoring in it. It added more flavor to the dish! I also agree that 1/2 c. chicken broth is not enough, it evaporates so you will need a little more. I will make this again! :)
