Zucchini Soup with Herbs

There is no way the measurments on this are correct... I had to alter everything. 1 c of chicken broth is supposed to make a pot of soup? Not so sure about that. I used a lot of different spices to add more to this... I also used 4 c. chicken broth and 2 c. milk... made plenty. I used red potatoes with the skin, and about 8 c. diced zicchini. This tasted wonderful, but I had to write all over the recipe to make it right... I'll make it again, but my own way.

Sugar Coated Pecans

A-M-A-Z-I-N-G! I followed reviewers suggestions and doubled the cinnamon, added some all spice, and did 1/2 white 1/2 brown sugar. My husband and I couldn't stop eating them, and when I took some to work, they were gone within a couple hours. My boss even asked for these for Christmas, haha. Thanks!

Spicy Stuffed Chicken Thighs

Interesting idea, but it's a little pointless to stuff chicken with sausage. While eating it, it felt like I needed to choose one over the other. Both tasted good separate. I used a chicken sausage that had bell pepper and onion already mixed in with it (my favorite), but I don't think I'll do this again.

Hashbrown Casserole

This recipe is perfect just the way it is. It's simple and classic. It doesn't need all those alterations. My late grandmother used to make this exact recipe at every family holiday and they were called "Party Potatoes." I've continued the tradition at my own family functions.

Spiced Pumpkin Seeds

These are excellent straight out of the oven while they are still hot. But if you let them get cold, you might as well toss them out. Hubby and I scarfed down 3/4 of them and saved the rest for later... we ended up not liking them cold. This is a great idea though! I'll definitely make these again.

Teriyaki Tuna

I used salmon instead of tuna, and I left off the salt & pepper. Teriyaki sauce is salty enough. It was excellent. Next time, I will sautee garlic with the salmon. I served it with teriyaki noodles and sugar snap peas. Yum. :)

Russian Mushroom and Potato Soup

This is a very tasty soup, but I modified it quite a bit... I didn't add leeks. In the beginning, I sauteed the carrots and mushrooms all together at once instead of doing the mushrooms later (I'm all about saving extra time!). I also used more butter. My potatoes were red potatoes and I did not skin them. The mushrooms I used was a combo of shiitake, portobello, and white button mushrooms. In terms of seasoning, I ended up adding a little red pepper, parsley, savory, and garlic salt because I felt like it was missing a lot in terms of flavor. I almost didn't add the half & half/flour mix at the end because the broth was so good as is, but I went ahead and did it and was pleased. Once I made all of the above changes, I was very pleased with the recipe and so was hubby. We both have some left over for lunch today and tomorrow. Thanks!

No-Fuss Meat Loaf

This was a good basic recipe. I halved it for my hubby and me. Believe it or not, chicken flavored stuffing mix was good in this! (Hubby accidentally bought it) I added worcestershire sauce as well, and it came out pretty good. Next time, I'll add onion and minced garlic. This recipe is great for starters and can easily be played with. I served slices of it on top of a bed of mashed potatoes, in a bowl. Thanks!

Slow Cooker Chicken and Dumplings

This came out pretty good! I added some seasoning though... parsley, garlic salt, black pepper... I also added carrots and zuccini. I let it cook in the crock pot all day on low, and when I got home from work, I took out the chicken breast, shredded them, and put the meat back in. I also only used 1 can of biscuit dough and it was enough. We had a lot of left overs and it made very good lunches for hubby and me. Thanks!

Pumpkin Chocolate Chip Bread

This is a very moist and tasty bread! Perfect after dinner with some hot spiced tea. The only problems I had were my own fault! I used too much flour on the bottom of the pan, and I accidentally dumped a whole can of pumpkin in the mix instead of measuring out what I needed... oops! Regardless, it came out delicious, just a little squishy in the middle from the extra pumpkin, ha. I can't wait to make my next loaf--and next time I'm going to double the chocolate chips!

Hearty Pasta Tomato Soup

Good idea for a soup. I cut all the veggies the night before and put them into a gallon-size Ziploc bag with all the spices and minced garlic, then shook it up to coat everything, and left it in the fridge over night. The next morning, I just dumped everything into the crock pot very quickly and let it cook on low while at work all day. Next time I will leave out the stewed tomatoes though because they made the soup taste too much like a stew. Otherwise, this is a great idea! I made a huge batch for hubby and me and had enough to fill up 4 large tupperware containers! Two are in the freezer for a later dinner, and the other two we're taking to work for lunches (we can each get 2 lunches out of them!) Thanks!

Zesty Slow Cooker Chicken Barbecue

Let me start out by saying that this was very tasty! I threw in 3 large chicken breast, let them cook all day on LOW, and then shredded them and served them in pita pockets. However... I am only giving this 4 stars because the sauce burned... either BBQ sauce is not meant to cook all day, or my crock pot is insanely strong because I had it on the lowest setting possible and the sauce burned all around the edges of the pot and on the bottom. Maybe the sauce itself was too thick, I'm not quite sure... but the recipe was very yummy and my husband and I both have left overs for work today. I'll try it again with a thinner sauce...

Chicken Marsala

Maybe I had a bad brand of Marsala... but I couldn't handle this. Neither I nor my husband enjoyed this... we did not save the left overs. Sorry. I'll try it with just white wine next time... not the same, I know, but as much as I enjoy ordering chicken marsala in restaurants, I will never make this again.

Cheesiest Potato Soup

This was a great basic recipe, but of course, I changed it a bit. I used red potatoes, so I didn't peel them (the skin is the best part!). I also did not puree them... I like the chunkiness of the potatoes, so they stayed diced. Also, I used 2 cups of cheddar and 1 of monterrey jack... so I added an extra cup of chicken broth (I used an entire box of Swanson's broth--perfect amount!) and used 1 cup of Half & Half instead of the cream... with all those changes, the soup was a perfect creamy, cheesy consistancy, without being too thick. My husband and I both ate a big bowl for dinner and had some the next day for lunch. Yum!

Spicy Flank Steak

There is nothing in this recipe that would actually cause this to be named "SPICY frank steak"... so I added red pepper flakes. It came out very delicious. We dipped in ranch, but next time we'll try blue cheese. The only reason I didn't give 5 stars is because it was missing a spicy element that I had to add myself. Thanks, though! I'll make it again.

Hummus Pizza

I took the idea and altered it a bit. I used fresh hummus from the local gyro restaurant. I added grilled chicken pieces, roma tomatoes, red bell pepper, monterrey jack cheese, and sprinkled a pizza seasoning on top. OH MY, was it tasty! My husband devoured every last bite of the pizza; there were NO left overs. I can't wait to make this for friends! Thanks for the idea!

Holiday Chicken Salad

This is excellent! My husband couldn't get enough of it. I made it for dinner one night because we wanted something light and refreshing. I served it inside large croissants with a side of fresh mellon and berries... perfect for a hot summer night in the south! I plan to make a double batch so we can have lunch for a week. :)

Chicken Breasts Stuffed with Perfection

I used store-bought Italian Bread Crumbs instead of making my own. I also used Caesar dressing instead of Italian for the marinade. The feta I used was the crumbled Sun-dried Tomato and Basil seasoned cheese. I brushed extra dressing on top of the chicken after I stuffed them, then added the bread crumbs. Very tasty. I'll definitely make this again and try different Italian and Caesar style dressings to mix it up a bit.

Black Bean Spinach Pizza

Y-U-M! This comes out perfect on a Pampered Chef stone. I am a mushroom queen, so I couldn't leave those out. :) I sauteed the mushrooms with the garlic and onion before adding to the pizza and it was FANTASTIC. Everything else I did just as the recipe called for and I must say, I am very happy with it. We'll definitely make this again. Thanks!
