Salmon Fillets with Creamy Dill

WAY too much sauce... too much mustard, too. I had already cut the sauce recipe back a lot for 2 large salmon fillets but it was still a big waste of sauce. I ended up putting this on a bed of white rice so the sauce had somewhere else do go. I'll make this again but I'll cut back on both the mayo and mustard.

Butternut Squash Soup

This soup is fantastic! Especially after it's a day or two old. I took other recommendations and cut two large butternut squash in half, placed them face down and baked on 375 for 30 min... scooped out the inside and blended it in a blender with the cream cheese in batches. I seasoned just as recommended and it really didn't need anything extra. I've been eating the left overs for two days now with rolls. It gets better the longer it sits. I will definitely make this again!!!

Slow Cooker Chicken Cacciatore

Risotto with Sun-Dried Tomatoes and Mozzarella

This is quite possibly one of the best risotto recipes I've ever made. It's so simple and perfect. I used 3 1/4 c. chicken broth instead of veg stock, and 1 c. risotto. It came out perfect with those measurements. I served it with filet mignon (brushed the filets with the oil from the tomatoes) and buttered asparagus for my wedding anniversary. A perfectly fancy meal in the comfort of our own home! My husband LOVED it!

Chicken a la Camille

The chicken was moist, but this wasn't the best recipe. I don't know what it is, but Italian Seasoning and BBQ Sauce is like using coffee creamer to replace milk in a recipe... decent idea to save yourself, but not necessarily the best choice. It's better to just go with one or the other. Hubby liked it, but he won't miss it if I don't make it again.

Simple Beef Stroganoff

Simple and plain. I wouldn't have been able to get away with putting this on my dinner table without some seasoning in it... salt, pepper, and a little garlic powder aren't enough. I actually used seasoned pepper and thyme with the garlic powder and salt, and I cooked it all into the beef instead of adding the garlic later. My husband liked it since I made the alterations.

Smothered Filet Mignon

I used crumbled feta seasoned with dried tomato and basil instead of the blue cheese. I served this with pan seared jumbo scallops topped with diced roma tomatoes, asparagus, and a spinach salad with tomatoes, dried cranberries, and feta for a lovely Valentines dinner for my husband. We scarfed every bit of it with some champagne. The steaks were delicious, especially paired with the scallops. I will definitely make this again!! It looked beautiful on the plate and tasted wonderful.

Roasted Chicken with Risotto and Caramelized Onions

This truely is a wonderful recipe. What I did for the chicken was bought boneless/skinless chicken breast, cut it into chunks, and cooked it in olive oil and an herb chicken seasoning mix. It was perfect with the risotto and onions. I'll definitely make this again. It's wonderful left over.

Basil Goat Cheese Pizza

Yummy pizza, but I couldn't stand the idea of not adding a little chicken. :) I took some pre-made grilled chicken strips and cut them into bite-size bits... that is the only change I made. Excellent pizza! Hubby was pleased.

Easy Salsa Meatloaf

I used ground turkey instead of beef and doubled the entire recipe. Hubby liked it, but mentioned that it seemed as if most of the flavor from the salsa had cooked its way out. Next time, I'll throw in a packet of taco seasoning. I also used a very chunky salsa as reviewers recommended. I'll make this again.

Basil Chicken over Angel Hair

This came out quite tasty! The left overs are excellent. I must say, I feel like something is missing though... maybe more seasonings aside from basil... maybe I needed more tomato... either way, my husband enjoyed it and this was a great, quick meal after a long day at work. :) Thanks!
