Roasted New Potato Salad With Olives

Awesome recipe. Love the dressing! The briny olives worked great alongside the natural sweetness of the onion and caramelized potato. Delicious.

Sweet, tangy and delicious. I bumped down the mayo a bit (~2/3 cup) and it was still excellent. Make sure to properly salt and pepper. Yum!

Browned Butter Vegetables with Almonds

Great skillet recipe. I wanted a slightly crunchier alternative to your standard brocolli and butter. This fit the bill perfectly. The brown butter was elegant and more complex. A keeper!

Awesome Baked Sea Scallops

The most tender and moist scallops I've ever had. Great delicate flavors. I used some dry french bread -- coursely crumbled -- for the bread crumbs. Served the dish with warm bread and brown butter broccoli...delicious and fast dinner!

Boilermaker Tailgate Chili

Excellent chili recipe with a great balance of flavors. Also, it's very amenable to changes/alterations. Due to what was on hand, I omitted the sausage and celery...and it still turned out fantastic. Mine simmered for about 6 hours and really built up some kick. A little dollop of sour cream helped temper some of the fire. Good, belly-warming stuff. Thanks!

Artichoke Spinach Lasagna

Made primarily as printed -- and it came out great. Make sure to let it stand for at least ten minutes, so as to let some of the water evaporate out. I also added some olives and sliced sun-dried tomato to the top layer for a touch more color and flavor. Nothing too decadent, but it was simple and delicious.

Golden Rum Cake

AKA the "Uh-uh Cake". A crowd pleaser and sure-fire aphrodisiac. Followed the recipe with only a couple of alterations. Used milk instead of water for the cake -- for a creamier taste/texture. Also, cut in some Starbucks Liqueur for the glaze.

Flavor-wise this recipe is absolutely fantastic. Unusual but sweet and spicy balance. I made as-is but threw in a bit more heat with some red pepper. I served it over white rice and it was good...but I think it might be better utlized as a filling for a taco/enchilada/empanada

Chocolate Chocolate Chip Cookies II

these things are delicious. i substituted coconut extract for the vanilla and did about 2/3 macadamia nuts to 1 1/3 white chocolate chips. i also made my big -- about 1/4 cup scoops. came out chewy and utterly amazing. great recipe!
