A Simply Perfect Roast Turkey

Reviewed: Nov. 25, 2006
As most of the other reviewers, this was my first turkey. It turned out wonderful, I got rave reviews! The only change I made was only using 1 stick of butter instead of 2, but that was plenty. Update: I've made it several times now and it always turns out perfect! I've started sprinkling a little bit of sage on top, too, and that is great!

Roasted Garlic Mashed Potatoes

Reviewed: Nov. 25, 2006
These were great, but I did add more butter and roasted garlic, and I also used heavy cream instead of milk.

Gourmet Sweet Potato Classic

Reviewed: Nov. 25, 2006
I loved these! They were not too sweet for me, but I also used the biggest yams I could find! It ended up filling the entire 9x13 pan, and I also added one more egg and a full stick of butter (since there were so many yams!). Was a big hit on Thanksgiving!

Chive Buttered Carrots

Reviewed: Nov. 25, 2006
I've made these twice, and both times, they weren't huge on flavor. I added a couple of cloves of minced garlic to the carrots the second time I made them, and that helped a little. I think maybe using olive oil instead of butter might make a difference as well.

Green Curry Tofu

Reviewed: Dec. 28, 2006
I thought this recipe was pretty good, especially for being so simple. I had all of the ingredients on hand already, so I liked that. I thought it was pretty spicy (which I love), but without a whole lot of other flavor, so I was going to give it a 3. However, my fiance loved the recipe and said to give it a 5, so I went in the middle and gave it a 4. I think it would be a little better if there were a few veggies in it (like bell peppers, potatoes, or carrots, etc).

Christmas Couscous

Reviewed: Dec. 28, 2006
I liked this recipe because it was very simple. However, I gave it a 3 because I agree with the first reviewer about it being bland. I added garlic, but I think the recipe could be approved on more by adding some spices.

Peppermint Pinwheels

Reviewed: Dec. 28, 2006
These cookies were great! I doubled the butter to prevent the dryness problem that other reviewers described, but it didn't seem to help. However, I did let them sit in the fridge for about 24 hours before slicing them, so I think if had sliced them after only a few hours in the refrigerator, they would have been less crumbly. I did make one change to the recipe: I didn’t quite use the full 1/2 tsp of peppermint extract, and added half a package of Andes peppermint baking chips (the red ones). I think this was a really nice addition, and the cookies would probably still have been great if I had used the entire 1/2 tsp of peppermint extract in addition to the peppermint baking chips. Thanks for the great recipe!

Party Punch II

Reviewed: Dec. 28, 2006
This was great! Everyone at our party loved it. I forgot the frozen strawberries on accident, and my punch bowl would only hold one of the 2-liters of 7UP, but it was still great! I also added more rum.....

I got rave reviews when I made this pie for Christmas! I followed some other reviewers advice, and doubled the caramel, and it was great! Thanks!

Spanish Cod

Reviewed: Oct. 15, 2009
I am rating this recipe a 5 based on the sauce alone! I omitted the veggies, as I was looking for more of a plain sauce for fish, and it was amazing!! I used a 1/3rd of the fish since it is just my husband and I, but I cooked all of the sauce since we were having it over angel hair pasta. Unfortunately the Cod we used was VERY fishy, so I did not like the end result, but I am definitely going to try it again maybe using halibut or tilapia filets, or even chicken cutlets. The sauce could also just be tripled alone for a homemade spicy marinara sauce.

Oven Roasted Red Potatoes and Asparagus

Reviewed: Oct. 15, 2009
I rated it a 4 only because I think the spices were overkill. I didn't read any reviews before making it, but in hindsight I would have cut back on the rosemary and tyme (maybe 1/2 to 3/4?) like other reviewers. I am also in high altitude, so the potatoes took a little longer to cook, which I am slowly getting used to. I would recommend waiting until the potatoes are pretty much done before adding the asparagus. But I think next time I make this the outcome will be a 5!

Jo's Rosemary Bread

Reviewed: Oct. 15, 2009
This bread is incredible and moist! I baked it in the oven instead of a breadmaker, and while I struggle with baking in general because I am at high altitude, it still tasted great (didn't look so pretty!). The key is using high quality rosemary. We didn't grow rosemary in our garden this year, so I went to a local spice shop near our house that grinds really fresh spices, and that was perfect! I can't wait to try this bread again. I might try it in my breadmaker next time.

Blue Cranberry Sauce

Reviewed: Oct. 15, 2009
This cranberry sauce was the best I have ever had! The blueberries make it two steps ahead of any traditional recipe. I could not find fresh blueberries in our local stores when I made this (for Thanksgiving), but I used frozen for both and it still came out fantastic. I recommend it to anyone who wants a change from typical cranberry sauce on the Thanksgiving table!

Sugar Coated Pecans

Reviewed: Oct. 15, 2009
I loved this recipe to make pecans for snaking on Thanksgiving day! I added a little bit more vanilla and cinnamon, for my taste preferences, and it was perfect. I also just stirred it all together in a bowl instead of using a ziploc bag, and that was sufficient.

Creamy Au Gratin Potatoes

Reviewed: Oct. 10, 2010
I think next time I will add some minced garlic to the sauce but this was really good! I did not cover with foil, and cooked for about an hour and 15 minutes.
