Teacher/Librarian, mom, food freak :) To hear my mom tell it, I've been cooking since I could stand up! It's always been something I enjoyed but never thought it was a significant talent until my son pursued cooking school, and showed me how much I know! Love to learn more and more everyday.
My favorite things to cook
Ethnic foods are by far my favorites...from any place, with any restrictions! I grew up learning Mexican family traditions, and Italian cooking secrets from the community I lived in....could not have been luckier. After a few years abroad, I feel like I've got a good base into Western cooking. Eastern? Still working on that!
My favorite family cooking traditions
Food is the center of every celebration! We love to try new things for holidays, and probably the most successful was a Texas style "cook-out" one year for Christmas. Imagine...a brisket grilling on Christmas day in northern Wisconsin! :) Am still working on duplicating lots of my husband's favorites. His mom was from Mississippi, and I've got a lot to learn about Southern cuisine.

Chicken Suiza Cornbread Bake
I LOVED this recipe! I tweaked it to the degree that we'd almost have to call it something different...but maybe not. I couldn't find a cornbread package of the size indicated, so I got two 6.5 ounce packages. I also drained the whole kernel corn, and used 3 regular eggs, and probably a bit more onion than was called for (I LOVE onions!). Here's where I got creative. I cooked 5 chicken breasts and shredded them. I then mixed them with a container of sour cream, 2c Monterrey jack cheese, and a bottle of green salsa (the mild sort). I spread that over the cornbread mixture, sprinkled more cheese over the top, baked and enjoyed!! My family loved it, and we'll definitely have it again! The earlier reviewer who mentioned that it's a bit difficult without cooked chicken made a point, I time, I'll probably pick up a rotisserie chicken from the deli and use that.

Basic Flaky Pie Crust
Simple and wonderful! I wouldn't recommend this to someone who hasn't had a bit of experience rolling pie crust (or something similar), as it is not the easiest to roll out, but it was a virtually perfect pie crust!

Breakfast Casserole II
This was definitely a family favorite, but I did a fair amount of tweaking, too! Since this is fresh veggie season here, I added some candy onions, green, and red peppers that we seem to have so many of. Before mixing, I sauteed them with the mushrooms. I also found the egg mixture to be quite a lot, so next time, I'd take that down by about 1/3. The casserole definitely needs some seasoning, so in addition to salt and pepper, I added some garlic. I used sharp cheddar cheese, and probably doubled (if not more) than was is called for in the recipe. All in all, it's easy to make and makes a LOT, which was exactly what I needed at the time. I'd consider using spicy sausage next time...and I definitely plan to try this with fresh golden potatoes in the future, as well.
