Ratatouille Bake

Love this recipe! I made it for the first time tonight and it is a winner! I used yellow squash instead of zucchini as I couldn't find it in the stores. Thanks for submitting! I needed something different. :)

Chewy Chocolate Chip Oatmeal Cookies

There was nothing spectacular about this cookie. Not bad, but not great. Just an average cookie. I didn't have the trouble that others did with it spreading. I followed recipe exactly, except I cut the salt in half. I will note that I am sure they will all get eaten, though! ;)

Crunchy Rice Casserole

Yummy! Quick and easy when you need a dish to throw together. I used 96% fat free beef, brown rice, skim milk, 2% cheese and healthy request soup to cut calories and make a little healthier. I also used the french fried onions on top as someone else had posted since I didn't have any corn flakes. (Of course, I used sparingly!) Kind of tastes like stuffed peppers. Thanks for sharing!

Chicken Pot Pie VIII

Excellent recipe! I never make crusts, so I was afraid to try it, but it turned out great! I took the suggestions of others and doubled the crust to have two pies. I froze the second pie and when we ate that one, it tasted just as good as the first night. I didn't measure, but I did add extra veggies as well as peas. I also boiled the potatoes for a bit before adding and they turned out lovely. My hubby also loved. It got his rarely given "It's a winner!" review! Now, if we could only make a crust without lard, we would eat this every day!

Golly Gee Gluten-Free Pancakes

Another great alternative for those of us needing gluten free! I tripled the recipe as it only makes 3 small pancakes. Then, I put the others in ziplocks in the fridge for instant breakfast during the week.

Roast Sticky Chicken-Rotisserie Style

This is an amazing recipe! I took ideas from other reviews and so glad I did. I made up a bunch of the spices to have on hand as I have made this recipe several times. I serve the hot chicken the first night I make it with mashed potatoes and a veggie. As another person reviewed, I then make enchilladas and have also made chicken pot pie as well. It makes a lot and it is worth the effort to save the money. (I also boil the bones to make a chicken stock and put them in the freezer.)

Pumpkin Bread IV

This recipe was really easy and yummy! I substituted all of the oil with natural applesauce. The applesauce does change the texture a little, but if you are looking to cut calories, it is not too noticeable and worth it! I didn't double my spices but put heaping amounts in and it was very tasty. (My spices are brand new, so very strong.) I made 6 mini loaves (all connected in one pan) which took about 20 minutes to bake.
