Protein Chocolate Chip Cookies

simple recipe that is yummy and makes just the right amount of cookies. I usually enjoy my cookie hot out of the oven, but let these cool and eat them when they firm up. I used cake batter flavored protein powder this time. You can sub all kinds of flavors. I will make them again

Sweet and Sour Zucchini Salad

What a great dish. I did use splenda, 1/2 cup and I didn't have cider vinegar so i used red wine vinegar. The FIRST day we had it I only had time for it to marinade 5 hours. Company loved it. It was a perfect mix of vinegar and onions. Day 2, I added more zucchini and took it to a pool party. Rave reviews again. Unfortunately, not as oniony today Day 3, I have thrown in cauliflower and peppers. I will be so sorry when it is gone. Tomorrow will be our last meal of it.

Spinach and Feta Pita Bake

excellent appetizer, I had to sub regular pesto for the tomato and I used whole wheat tortillas. I brought them to a party and everyone raved about how good they smelled and tasted.

Grilled Marinated Swordfish

I bought some swordfish because it was on sale and had no idea how to cook it. This was the best recipe. My only change was cutting the oil down to about a teaspoon to cut down on the fat. My husband also raved, I ran back and bought more swordfish for an upcoming dinner party.

Butternut Squash Enchiladas

What a great recipe. I was trying to cut the calories a bit so I used Lavash instead of the tortilla. I also added mushrooms to the onion/garlic and I did not use the enchilada sauce. After I baked it I put shredded lettuce, tomato and onion on the top. I put extra feta cheese and chunky hot sauce on the table for those who wanted it.

Cauliflower Casserole

excellent!!, i did add the chopped onion as was suggested. My parmesan cheese was quite ripe which really added to the flavor. Lastly, I mixed everything together in the pot I boiled the cauliflower in and then baked it. Mixed a salad and that was our meal. Can't wait to make it again.

Grilled Salmon II

Wow, what a wonderful recipe. We grilled it last night. I didn't have any peanut oil so I subbed canola, I also used white onion and it was still fantastic. I am a salmon purist and was hesitant about marinading it I will definitely make this again after i go to the grocery store.

Skillet Chicken and Vegetables

My family thoroughly enjoyed this recipe. It is the kind that you can adapt to whatever vegetable you like or have in the fridge. I prefer my food spice so we also added hot salt and jalapenos to the dish. I will be making it again.

Peanut Butter Noodles

I too added vegetables and tofu, my husband couldn't stop raving. I didn't have the exact ingredients and it waas still 5 stars. Next time, and there will be, I will be prepared and have everything i need plus the veggies and tofu.

Amber this is a great recipe. My family loved it. I did double the sauce and got it off the heat quickly to minimize reducing the quantity. Will definitely make again.
