Sweet and Sour Zucchini Salad
What a great dish. I did use splenda, 1/2 cup and I didn't have cider vinegar so i used red wine vinegar. The FIRST day we had it I only had time for it to marinade 5 hours. Company loved it. It was a perfect mix of vinegar and onions. Day 2, I added more zucchini and took it to a pool party. Rave reviews again. Unfortunately, not as oniony today Day 3, I have thrown in cauliflower and peppers. I will be so sorry when it is gone. Tomorrow will be our last meal of it.

Spinach and Feta Pita Bake
excellent appetizer, I had to sub regular pesto for the tomato and I used whole wheat tortillas. I brought them to a party and everyone raved about how good they smelled and tasted.

Grilled Marinated Swordfish
I bought some swordfish because it was on sale and had no idea how to cook it. This was the best recipe. My only change was cutting the oil down to about a teaspoon to cut down on the fat. My husband also raved, I ran back and bought more swordfish for an upcoming dinner party.
