Simple Scones

Reviewed: Oct. 19, 2012
I made these with salted butter, cutting the salt called for in half. I didn't freeze my butter, and simply cut it in with a pastry blender. These are very good, and pretty simple to make.

After-Thanksgiving Turkey Soup

Reviewed: May 1, 2012
This is the first time I've made a creamed turkey soup, and it is delicious. I had no chicken bouillon granules, so used a bit more salt instead. I'll be cooking another turkey soon just so I can make this.

Perfect, easy, beautiful. I did as some, placing it on foil, tenting it until the last 10 minutes.

Sausage Soup

Reviewed: Mar. 12, 2011
Very nice, hearty soup. I didn't change much, only added 2 cups more broth and used less pasta, just 3 small handfulls. I will make this again next winter.

Buttermilk Syrup

Reviewed: Feb. 18, 2011
I kept tasting this as it cooked, and it was yummy. The next day I made pancakes, and while the syrup was good, it seemed to me it would be better as a topping for something else like cake or ice cream. The flavour is very caramel, and I prefer maple on my pancakes. I must stress, it is a wonderful flavour; just not the best thing for pancakes in my opinion. ........A few days later.......This syrup keeps well in the fridge, and I decided to give it another try. It does seperate, and must be heated and stirred before using. I made french toast, and liked this syrup a whole bunch more than the first time. So it's either growing on me, or it's better on french toast than pancakes. Also, I tried sprinkling it lightly on salted, buttered popcorn, and that was good.

Torsk

Reviewed: Dec. 19, 2010
This is super easy, foolproof, and we liked it a lot. I did as others have done and boiled earlier in the day, dried and chilled, then just having the last step made last minute prep so easy.

Ruth's Grandma's Pie Crust

Reviewed: Sep. 30, 2010
My pastry has always been made with lard, however I only had shortening on this day, so I tried this recipe. Now given that we are lard pastry people, this recipe made a good pastry, but just not up to our tastes. I feel it made a perfect shortening pastry, and cannot fault it. In fact, I was very happy with it, but my husband wants lard pastry again.

The Easiest Blackened Chicken

Reviewed: Sep. 15, 2010
I love how easy this is. As someone else did, I cut back a bit on pepper, and added a bit of brown sugar. But that's just a matter of personal preference. It still had a lot of bite. Tasty and so, so easy.

Jacky's Fruit and Yogurt Muffins

Reviewed: Sep. 1, 2010
These have a sort of spongy texture, which I love. I used fat free peach yogurt, and think there are many flavours that would be good, like lemon. I used applesauce instead of butter. And my blueberries were frozen, which made no difference. I doubled the recipe, and froze most of them.

Amy's Healthy Fruity

Reviewed: Jul. 25, 2010
Very simple, easy, quick, and yummy. I had no powdered soy, so used powdered skim milk. Also threw 2 ice cubes in the blender. Put leftovers in the fridge, and next day it was good, too.

Fish Chowder II

Very tasty, and so quick to make. I cut water and milk back, added prawns, and thickened it. I also added the grated carrot, as suggested for color. Superb, and rated 5 stars by all who ate it.

Buttertart Squares

Reviewed: Oct. 6, 2009
Butter tarts are such a nuisance to make, and my husband insists on them at Christmas. These turned out so well, and are so easy, that I'm hoping he'll let me get away with them at Christmas. I did change the brown sugar to 1 cup only, and they are sweet enough.

Peppermint Meringues

Reviewed: Dec. 21, 2008
Wow, I've never made meringue except for pie, this is easy and very tasty. As soon as the first batch has cooled (I had to try one before it was ready) I'm making a second batch for neighbors. I piped them out af a plastic bag, and I know the second batch will look even nicer now that I have practiced. I didn't change a thing, and they are pepperminty enough without adding peppermint extract as some did.

Scalloped Potatoes II

Reviewed: Nov. 22, 2008
This is just like my Mom made, perfect. I did add 1/2 a large sliced onion, for my own taste. Note - I used large, smooth skinned russets, and employed my apple peeler, slicer, corer. I had to cut the potatoes in half crosswise so they would fit, and the time saved was amazing, plus the slices were beautifully uniform. All I had to slice was the 'cores', which only took a few seconds.

Corn and Cheddar Chowder

Reviewed: Nov. 4, 2008
Nothing wrong with this chowder, though it isn't one we could eat often, maybe once or twice a winter. It is very filling, with an unusual but pleasing blend of flavors, and my husband liked it even more than I did.
