I kept tasting this as it cooked, and it was yummy. The next day I made pancakes, and while the syrup was good, it seemed to me it would be better as a topping for something else like cake or ice cream. The flavour is very caramel, and I prefer maple on my pancakes.
I must stress, it is a wonderful flavour; just not the best thing for pancakes in my opinion.
........A few days later.......This syrup keeps well in the fridge, and I decided to give it another try. It does seperate, and must be heated and stirred before using. I made french toast, and liked this syrup a whole bunch more than the first time. So it's either growing on me, or it's better on french toast than pancakes. Also, I tried sprinkling it lightly on salted, buttered popcorn, and that was good.
