Catfish Cakes

Love these, and is great for those who aren't too awfully fond of catfish to begin with. Just needs a little more old bay, and it would recieve a 5 star.

Irresistible Irish Soda Bread

Southern Living Magazine's Chicken-Fried Steak

Southern Potato Salad

I did a few improvisions due to: what I had on hand & likenesses. I used onion rather than celery..and used only 2 eggs. Used a little more mayo. I just took a bite..and yummy. I will be serving this cold, though. Thanks a bunch!

Classic Macaroni Salad

This was a hit at my house for the 4th of July cookout. Perfect mayo/mustard balance. I didn't use the 'optional' items, but I'm sure they would have added great flavor.

This was excellent! Took to a bday party..and it was gone in no time at all. I did as someone said and greatly reduced the amount of rind..and I did take the easy route and bought canned yams.

Buffalo Chicken Wings I

a new favorite. This is the first time I ever made chicken wings and was very impressed. I did put them in flour..and got a bottle of Frank's red hot sauce. Really good.

Pork and Green Chile Casserole

Pretty good, I must say. I did up the water to 1/2 c., and used the Rotel as others suggested. I also used the colby/monterey jack cheese. Note: Not good for those with taste buds that don't agree with heat.

Luscious Lima Bean Soup

This is pretty good. The changes I made....I didn't use Leek, couldn't find it at the supermarket. Used chicken boullion, since it was what I had on hand. Also, thru in salt pork. Next time, will try with ham. I cooked for nearly 2 hours and served with cornbread. Hubby loved it.

Peanut Brittle

oh my..how easy. I made this stuff on a regular basis back in my teens...and it just seems easier than before. I did add about a teaspoon of cinnamon for a twist. I have yet to bit into it..but, by the looks of it, I doubt anything went wrong. Highly recommended.

Glazed Corned Beef

I absolutely loved loved this! I've never cooked corned beef brisket, so I don't have a lot to compare it too. But, being my first experience was a positive one..it's a keeper. The only *change* was I couldn't find regular horseradish, so I wound up using Jack Daniels Horseradish Mustard in place of the horseradish & mustard. I found that the sauce made a lot! so, what was left, I saved for extra on the side.

Baked Ziti I

I have to admit I was a bit apprehensive about using sour cream in this..however, I was quite impressed with the final result. It tasted really good! Next time I plan on using another reviewers suggestion and replace the sour cream with ricotta. Even better the next day.
