Momma's Sloppy Joes

This is a great basic recipe. I sauteed garlic & bell pepper with the turkey(I would have used onion had I had any on hand. :-P). In the sauce, I also threw in about a tsp of crushed red pepper to add some zing.

Ghirardelli Milk Chocolate Chip Cookies

I really loved these. I understand it's a *standard* cookie, I felt it held up to what chocolate chip cookies should be. I mixed a day ahead, and did include pecans. I used a cookie scoop the day of, and thru baking, they held their shape pretty well. I will definitely do these again.

White Chocolate Chip Oatmeal Cookies

These should be renamed to 'Vanishing White Chocolate Chip Oatmeal Cookies' :-) They were a hit at work amongst the 3 varieties I brought along. This makes a pretty good size batch. I mixed a day ahead and refrigerated. The day of, I used a 1" cookie scoop. Good stuff!

Moist Turkey Burgers

I felt there was *way* too much breadcrumbs. If I do this version again, I will reduce it from 1 cup(four servings) to just 1/4 c. and see if that is any better.

Baked Pork Chops I

I used this recipe as a base, but like some others, the amount of baking time is really long! I went against the creamy mix per others distaste. I went mostly per the instructions til it went into the oven. At that point, I only baked for 40 min. Instead of all purpose, I used self rising and they came out delicious.

Ropa Vieja in a Slow Cooker

So very yummy. Although, I did change very minor things due to nutritional and time reasons, this was the most awesomely tender roast ever!! I used a 1.5 lb sirloin tip roast(one that was actually larger, but I split since this only a family of 3) rather than the chuck, for the nutritional reasons. Since I didn't start this until 2pm, I set the crock to high for about 3.5 hrs, then cut it down to low for another hour before shredding. I did not use the green pepper(personal preference), plus used the yellow onion, since that is what I had on hand. Otherwise....superb. I served this on soft taco shells with sour cream, lettuce & cheese(which I had pico de gallo, though). Yum

Jammin' Beef Stew

oh my word...unbelievably good..though, i did add both a can of broth, and an additional can of water, though would have added an additional can of broth if I had it available. I followed others and added chopped celery, and reduced the amount of jelly to about 1/4 cup(though may go to the full 1/2 since it wasn't an obvious taste)..and used italian stewed tomatoes since that is what I had on hand..this was unbelievably good :D

Kangaroo Chops

This is a great starter recipe..but, quartering and just baking my tatoes for 45 min just wasn't enough to make this tender enough to stick a fork in..i wound up microwaving the potatoes after baking for a few minutes to make them manageable..maybe microwaving a few min beforehand would help? anyhow..my only complaint. My addition of seasoning was Emeril's Bayou Blast..love the kick!

Deviled Chicken I

I used skinless leg quarters for this, though wish I had the skin, maybe I could have given this a five? But, the reason for the four, is the chicken was uber juicy, and because it was skinless, I covered it with foil the first 30 to prevent over-browning. and, being it was skinless, the flavor wasn't as bold as I wanted it.

Chicken and Dumplings IV

Oh my word! Great base for a recipe, did a few adjustments according to my taste. I used chicken broth, rather than water. Also, did add chopped celery & carrots, and a savory blend of herbs. Rather than make my biscuit mix, I purchased Pillsbury Grand buttermilk biscuits, split in half. It came out wonderfully tasty.

Kabob Marinade

Absolutely loved this..virtually followed to the T, aside from the optional meat tenderizer(which I don't have currently). I used cubed top sirloin, marinated about 8 hours...couldn't imagine how good the flavor would have been after 24 :D. My fiance', who is addicted to steak sauce on his steak, didn't need it. I will use this more often, rather than buying a bottled marinade!

Black Bean, Corn and Turkey Chili

This is really good stuff..and figure friendly. I did make a few *minor* changes. In place of garlic powder, I used two cloves of minced garlic. In place of the salsa, I used Hunt's Fire Roasted diced tomatoes(undrained). I added a 15oz can of tomato sauce, and greatly lessened the amount of chicken broth(about 1/2 cup used). Oh, I omitted the sugar since it didn't seem necessary. Topped with shredded sharp cheddar with corn muffins on the side.

Poor Man's Pepper Steak

I only gave it a 4 because I didn't follow the recipe exact..I took some of the other reviews and swapped the water..I wound up using Classico's Triple Mushroom sauce...and cooked it 1:15. Other than that..the steak is very tender. I will definitely use again.

Cottage Meatloaf

This reminds me of my mom's meatloaf..I've been looking long and hard to find that! I wish I had made extra of the sauce to have on the side. The only changes I had...I didn't have tomato juice, so I used tomato sauce...and the meat I bought was prepackaged with 2/3 beef and 1/3 pork.....oh yeah..I didn't have any red pepper flakes on hand, so I dashed in about 5 shakes of Texas Pete.

Zesty Beef Roast

This was pretty good..definitely going into rotation. I had a roast just under 2 lbs., so I only baked it for 1.5 hrs. I served it over mashed potatoes. Yum.

Chicken Casserole Mississippi

This pleased my family..which is sometimes hard to do. The only changes I made was adding in diced green peppers to the saute, and adding canned shitake mushrooms. It was pretty good.
