Dilly Chicken Breasts

This was very tasty, my picky husband loved it. The only thing I changed was that I used olive oil in place of the Butter/margarine. I also used fresh dill and I grilled the chicken. This would be great on fish also!

Quinoa Side Dish

Excellent!! Very, very tasty. The only think I did different was after I added the broth to the quinoa I also added the onion and garlic so it would soften up. Just a preference. My husband loved it! Will be making again soon.

Absolutely Delicious 'Scratch' Cake!

This is not a "Scratch" cake. If you want a ricotta cake made from "scratch" try Louisa's Ricotta Cake! You will be very pleased. YUM!!! Had to make it twice in 2 days for a family of 3 who devoured it!!

Mari's Banana Cupcakes

These were absolutely delicious! There is a very slight taste of banana which didn't overpower the muffin. That's a plus in my house to disguise fruit fom my daughter. The only change I made was I used applesauce in place of the oil, I ground the nuts so they blended into the muffin and I added about 2 tableoons of fax seed and 1 teaspoon of vanilla. Oh and about 3/4 cup of mini chocolate chips! Yummy. I made a batch yesterday and there are only 3 left. About to make a second batch now. Will be making these alot! Thanks for a great recipe!

Banana Crumb Muffins

These were wonderful!! I took the advice of K. Lynn and added 1 tsp. vanilla, 1/2 tsp. nutmeg, and 3/4 tsp. cinnamon to the muffin batter. I used 1/2 c. white sugar and 1/4 c. brown. In the crumb topping I increased the cinnamon to 1/4 tsp. I also replaced the melted butter with applesauce. I baked them at 350 for 25-30 minutes and added the topping about 10 minutes before they were done. These were wonderful! Even my picky, picky 6 year old ate two for breakfast. Will definitely be making these again very soon.

Apple, Carrot, Or Zucchini Cake

I used only 1 1/2 cups of sugar and it was still plenty sweet. I used 2 cups of zucchini and 2 cups of apple, 1 cup of whole wheat flour and 1 cup of regular flour. I ground up the nuts finely and I replaced the oil with applesauce. Made 1/2 the batter out of mini muffins (bake for 18 minutes) and one loaf pan. My picky 5 1/5 year old ate them up like candy! Absolutely delicious!! Will be making these over and over again!

Seared Sea Scallops

My husband loved this recipe. I sliced 4 cloves of garlic and added about a teaspoon of butter to the olive oil and lightly toasted the garlic. I removed the garlic and set it aside and then fried the scallops. When the scallpos were down, I added the lemon juice and parsley to the pan with the drippings and added the sliced toasted garlic. Then I dizzled the sauce over the scallops. Delicious!!

Chicken Breasts Pierre

This was excellent. I took the advice of some of the reviewers and didn't add as much chili powder and used chicken broth in place of water and added sliced onions. Glad I did. Next time, I think I may decrease the amount of sugar, it was a bit too sweet for us. Other than that, it was delicious.

Cheddar Baked Chicken

This was absolutely delicious!! Going to make this from now on instead of chicken cutlets. My hubby loved it. There was so much flavor to it! I served it with buttered egg noodles and asparagus. YUM!!

Chocolate Glaze I

I used this to ice the top of the Brownie Chocolate chip Cheesecake by Eagle brand on this site. I used an extra 1/2 tablespoon of corn syrup and I also did it in the microwave as others suggested. It came out beautiful! Looks like it came from a gourmet bakery!

This was the best recipe ever! Very happy with the results. I also made a few different fillings like some others. Next time I will roll the dough into a log like someone else suggested. It will definitely save time, and I think there will be less loss if filling.
