Seared Sea Scallops

My husband loved this recipe. I sliced 4 cloves of garlic and added about a teaspoon of butter to the olive oil and lightly toasted the garlic. I removed the garlic and set it aside and then fried the scallops. When the scallpos were down, I added the lemon juice and parsley to the pan with the drippings and added the sliced toasted garlic. Then I dizzled the sauce over the scallops. Delicious!!

Banana Oat Muffins

These were delicious! I also replaced the oil with 1/3 cup of applesauce and I added about 2/3 cup of chocolate chips. Yummy!

Pumpkin Chocolate Chip Muffins

These were excellent. Used a full 15 oz. can of pumpkin and replaced oil with applesauce. Baked for 12 mins at 400.

Apple, Carrot, Or Zucchini Cake

I used only 1 1/2 cups of sugar and it was still plenty sweet. I used 2 cups of zucchini and 2 cups of apple, 1 cup of whole wheat flour and 1 cup of regular flour. I ground up the nuts finely and I replaced the oil with applesauce. Made 1/2 the batter out of mini muffins (bake for 18 minutes) and one loaf pan. My picky 5 1/5 year old ate them up like candy! Absolutely delicious!! Will be making these over and over again!

Caramel Popcorn

Wow, wow, wow!!! Delicious! I also took the suggestion of only using 1/2 cup of butter and it was just fine! This was gone in two days. I put it out for some company and they couldn't stop eating it! Will be making this over and over and over!

Banana Crumb Muffins

These were wonderful!! I took the advice of K. Lynn and added 1 tsp. vanilla, 1/2 tsp. nutmeg, and 3/4 tsp. cinnamon to the muffin batter. I used 1/2 c. white sugar and 1/4 c. brown. In the crumb topping I increased the cinnamon to 1/4 tsp. I also replaced the melted butter with applesauce. I baked them at 350 for 25-30 minutes and added the topping about 10 minutes before they were done. These were wonderful! Even my picky, picky 6 year old ate two for breakfast. Will definitely be making these again very soon.

Turkey and Quinoa Meatloaf

This was excellent. A bit salty, I will cut it back toa 1/2 teaspoon next time. Also, I made the mistake of putting the worsteshire sauce and tomato paste into the mixture and omitted the brown sugar. It was still delicious. It crumbles a bit, so I will take the advice of another reviewer and add an extra egg next time to hold it together better.

Dilly Chicken Breasts

This was very tasty, my picky husband loved it. The only thing I changed was that I used olive oil in place of the Butter/margarine. I also used fresh dill and I grilled the chicken. This would be great on fish also!

Waffles I

These were wonderful!!! I used 1 1/2 cups of flour and 1/2 cup of whole wheat flour. I used almost a 1/2 cup of applesauce and filled the rest of the 1/2 cup with vegetable oil, and 2 tablespoons of sugar and 1 teaspoon of vanilla! Oh, and I did beat the eggs until fluffy! These were the best waffles yet!! Thanks!
