About this Cook
Single mom of two. Love cooking for my babies. My teenage son is cooking now. Seeing him become independant and experiencing his own cooking triumphs is awesome.
My favorite things to cook
I love to cook just about anything that takes less than 30 mintues. But I recently found the joy of cooking in a crock pot.
My favorite family cooking traditions
Planning and making a meal with my sister and mother over the holidays.
My cooking triumphs
Making perfect grits. And hearing people rave about my salsa.
My cooking tragedies
Still haven't perfected chili yet. Something is always off.....

Avocado Feta Salsa
I just started eating avocados recently. But this recipe has turned me into an avocado addict!! Oh this is so good! I took the other suggestions and added cilantro and lemon juice. I even added a bit of basil. Make sure you chop up the oregano finely because it is a strong herb. I ate mine with a breakfast burrito. I'm going to eat the rest with pita chips. This is a keeper for sure!!

Suki's Spinach and Feta Pasta
This was easy and DELICIOUS! I used thick spaghetti and cherry tomatoes cut in half. Other than that, I stuck to the recipe. Oh, I also added a few tablespoons of pasta water to sauce so it would coat the pasta a little better. Mmmmmm

Chili Chicken
This came out kind of bland for me. Maybe the problem was that I used pork chops instead of chicken. But I figured it's the "other" white meat so it should work. I also added garlic powder and black pepper. Didn't add salt because of the soy sauce. Also used an inside grill pan. Other than that, I followed the recipe as is. If it wasn't for the garlic powder and pepper I wouldn't have tasted anything. And it needed salt after all! Maybe I'll try again, but this time add chopped garlic and chili flakes.
