Double Layer Pumpkin Cheesecake

This is SOOOO good! For those who are having a tough time thinking it is enough batter...just use a beater and beat it well and it will get puffy and fill more than enough for a pie crust. It makes it light and creamy that way! Great recipe! Thanks!

Broccoli Casserole

I have tried soooo many broccoli casserole recipes and this is such a keeper. I try to stay away from processed cheese so this looked like a good one to try. I did 1/2 fat free sour cream and 1/2 low fat mayo and it was wonderful!

Cajun Chicken Pasta

I make this once a month....it is great! I have used 2% milk and sometimes 1/2 milk/ 1/2 half and half to cut the fat....if you add cornstarch you would never know the difference! Great recipe!!
