Easy Cajun Jambalaya

Love this- easy and delicious! I've made this many times and often make adjustments to increase or decrease spices depending on who's coming for dinner. Also prepared with tomatoes with chilies to increase the zing and often throw in another pepper. Freezes well- thanks for this one!

Italian Wedding Soup I

I too made some changes to this. I found the soup to be a bit bland, so added 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp onion powder to the broth. I boiled the orzo for 5 minutes in the broth before adding the other items. I baked the meatballs to help reduce the grease. I grated the carrots and used 1/3 c while increasing the broth to 7 cups. Since I used everything out of my pantry vs making a trip to the store, I used one box of frozen spinach thawed and drained. Worked well with the changes.

Downeast Maine Pumpkin Bread

Now the go to pumpkin bread recipe in our house. Tried the recipe twice- once as directed and once 1/2 oil and 1/2 applesauce. Both turned out perfectly!

Eggnog Quick Bread

Very moist and delicious! Followed some changes others had listed- 2 tbsp veg oil, 2 C flour and 11/3 C eggnog, 3 tsp real rum and 1/2 tsp nutmeg. Rave reviews from everyone! Thank you for sharing this recipe!
