Hawaiian Tarts

Reviewed: Jul. 20, 2009
I will absolutely use liners next time, as getting these out was a nightmare! I tried both the suggestions and the recipe's guide, and both were a disaster-- leaving much of the tart in the tin no matter what I tried. I was mortified. However, the taste was excellent and they were still the first thing gone at my luau!

Chocolate Cream Cheese Frosting

Reviewed: Jan. 25, 2009
Though it's not in my nature to give bad reviews, this was just horrible! I used high quality ingredients and followed the recipe exactly, and it was unbearably biting (even my husband, who loves dark chocolate, could not stand it). I added another full cup of cream and extra pow. sugar (and then regular sugar as well), and it was very barely edible. I honestly don't understand the high reviews! I regret wasting the last of my good chocolate on this. I'll be having my cupcakes plain tonight!

Best Steak Marinade in Existence

No, the title isn't a stretch... this really is, by all accounts, the best steak marinade in existence!

Oatmeal Peanut Butter Cookies

Reviewed: Sep. 5, 2008
Great recipe! These will be my standard for pb cookies from now on, though I do double the amount of peanut butter. I also use a stick of butter instead of the shortening, just because that's what I had on hand the first time, and liked how it turned out.

Waldorf Astoria Cake Frosting

Reviewed: May 3, 2008
I did not care for this recipe. The taste was straight shortening and powdered sugar, even with butter-flavored shortening and extra butter and vanilla extracts. I couldn't fathom why this was so highly-reviewed. However, after adding 1/2+ cup heavy whipping cream and continuing to whip it like crazy, the frosting was wonderful! I highly suggest this addition, unless you want to feel as if you're eating straight shortening and powdered sugar!

Yes, no one WOULD guess there are 4 ingredients... they would be shocked to know there's anything more than dijon mustard! Sorry, but no one enjoyed these at all.

Tart Lemon Triangles

Reviewed: Mar. 23, 2008
Absolutely delish! We had a craving for lemon bars but didn't have the number of eggs most called for. With extra lemon juice and zest this was wonderful, both the crust and the filling. I'd like to try to make the crust on its own, as a shortbread-type cookie. I will make this again soon, with perhaps just a tad less sugar in the filling. Oh, someone said they would double the filling if making again... I thought it was a perfect ratio of filling to crust and, I believe, if I doubled the filling it would have overflowed my pie dish!

Shish Tawook Grilled Chicken

Reviewed: Mar. 23, 2008
This was wonderful, delicious and very tender/moist. I did not have the allspice, so that was omitted. This recipe is SO MUCH better than another from this site, which claims to be authentic, yet uses katchup and mustard. Thanks!

Thick-Style Lebanese Garlic Sauce

Reviewed: Mar. 20, 2008
I'm not sure exactly how to review this. I used slightly less salt than called for, the juice of two lemons (slightly less than 1/2 a cup), and like another reviewer, I also added about a tablespoon of mayo. Most importantly, I halved the oil called for, using only 1/2 a cup of each. I blended for a total time of 5-10 minutes and, even with half the oil, this never got anywhere near the consistency of mayonnaise, which is what I am used to. The flavor is good, but I have no idea how to get the thicker consistency promised and desired, even with adding extra garlic.

Blueberry Scones

Reviewed: Feb. 24, 2008
I had difficulty with these. I used heavy cream instead of half and half (what I had on hand), but I did use frozen blueberries. The batter wasn't terribly wet, but I did have a horrible time getting everything well mixed. I couldn't figure out what was going wrong (never had this problem before) and I ended up kneading so much just to get a decent mix that the blueberries still burst and my hands froze. In the end the taste was good, but it's not something I would make for consumption outside the house, on account of the very messy appearance. In making again I think I will have to rely on my mixer.

Skillet Spaghetti

Reviewed: Feb. 24, 2008
This was quite good. Instead of the tomato juice I used diced tomatoes in their own juice. Could have used a bit more flavor from something, but I will likely make it again... I just need to buy a bigger skillet! Thanks for the recipe!

Slow Cooker Chicken Taco Soup

Reviewed: Feb. 24, 2008
This turned out very well, but it had quite an intense kick that made it unsuitable for my toddler. I also used chicken broth instead of beer and used Taco Dust from Whole Foods as the seasoning. This is a great recipe for dreary days.

Grandmother's Buttermilk Cornbread

Reviewed: Feb. 23, 2008
Excellent recipe! I'd never made cornbread before, but it's my husband's favorite, so I thought I would give it a try. I only used about 2/3 of the recommended sugar and it had a perfect touch of sweetness. Baked in a roughly 12" round cast iron skillet. This is a keeper!

Balsamic Roasted Red Potatoes

Reviewed: Feb. 22, 2008
This turned out very well alongside garlic-lime pork chops, but I made some changes. Instead of simply using the balsamic vinegar, I used a balsamic vinegarette (Good Seasonings makes the best), topping that off with some straight vinegar. When adding this I also added some fresh baby spinach and tossed it all together, then put it back in the oven for about three minutes. Delicious and I was able to sneak some greens in as well!

Garlic-Lime Pork Chops

Reviewed: Feb. 22, 2008
This turned out well. I marinated for about 20 hours total, and found that it tastes almost spot on to Trader Joe's Mojito marinade! Since I no longer live close to a Trader Joe's and have really been missing that marinade I have a feeling I'll be making this often. Thanks!

Chocolate Covered Strawberries

Reviewed: Feb. 17, 2008
Delicious! I used butter and milk in place of shortening. I could not find my double boiler, so I used the metal bowl on the pot trick, and it worked out fine. I placed them in the freezer for about 10 minutes to get a quick set, then removed them from the toothpicks and placed on parchment paper. This is a wonderful recipe for a party... high impact and quick!

Easy Decadent Truffles

Reviewed: Feb. 17, 2008
These were very good for being so easy. I used the suggestions of another reviewer and added some heavy whipping cream and several ounces of bittersweet baker's chocolate. We divided into thirds, keeping one plain, mixing brewed espresso into another, and using raspberries (bought frozen, then microwaved and crushed) into the third. All were delicious, but the two with add-ins (though they had the perfect blend of tastes) were very gloppy. Dipped in ganache and frozen they were still a bit messy, but usable. No one seemed to mind at all- rave reviews!

Guacamole

Reviewed: Feb. 17, 2008
Delish-- got rave reviews at the party it was taken to, and was gone before I knew it. I could not find fresh cilantro, no matter how hard I looked, so I added a tablespoon or two of salsa verde to give it some extra flavor, and some extra garlic. I processed the avocados, onions (I have an aversion to biting into raw onion), and garlic with the salsa verde and lime juice in my food processor until reasonably smooth, then mixed the tomatoes in my hand. Making this again soon!

Sugar Cookie Icing

Reviewed: Dec. 29, 2007
Great recipe! I made a double batch for a double batch of cookies. I started out with a half cup of milk and mixed the sugar into that, then slowly added more milk to get a very creamy consistency. Was able to stack cookies in 45 minutes! Thanks for the perfect icing!
