Quick and Easy Mexican Chicken

A great-tasting dish! Like some others, I didn't brown the chicken first. The only salsa I had on hand was a mild green chili sauce and it worked out very well. I just popped it into the oven for about 35 minutes. I served it with Spanish Rice with a little of the green chili sauce stirred into that as well. A definite keeper and regular part of the menu! Thanks!

BBQ Steak

As another reviewer has said, "Goodbye store-bought marinades!" This marinade rocks! I used it on Rib-eye steak for Mother's Day. I followed some tips mentioned here, and used 1/4 cup vinegar, cut the salt in half, and since I had no rosemary, I used about 1/2 tsp dried thyme. This is definitely on my list of BBQ marinades...for steak, pork chops or chicken. I think it would be good on any of those! Thanks for posting it!

Irish Boiled Dinner (Corned Beef)

I have been making corned beef dinners this way for years! I always use the seasoning packet that comes with the beef, use the broth over the vegetables, and sprinkle a little malt vinegar over them. A side of horseradish or mustard for dipping the meat goes well also!

Jimmy Dean Golden Sausage Egg Rolls

I have made these sausage rolls for years. I use the hot sausage, add bean sprouts, matchstick carrots and green onion. Very tasty!

Beef Paprika

I made this years ago when I was in Holland; I ran out of the ketchup one day (at about 1/2 cup) so went to the local Spar market to get more - all they had was Curryketchup, so I used it as the remaining 1/4 cup - it came out great! When I returned to the States, Curryketchup wasn't readily available, so I added about 1/2 tsp curry powder to it (that's a "guesstimate")- still good! Also added mushrooms. My daughter was asking about this recipe a couple days ago, and I couldn't find it...until now! Thanks for posting it!
