My Grandma, Mother, Sister and I occasionally get together and make lasagna together. We hand make the noodles and it makes such a HUGE difference!

Pasta with Tuna, Sun-Dried Tomatoes, Artichoke Hearts, Lemon, and White Wine
I didn't have tuna on hand so I made a slightly different, more "seafoody" version of this dish. I substituted the tuna for Basa fish I had in my freezer and I added a can of baby clams at the end. Instead of the chicken broth I used the clam juice from the can, it added a much different flavour but it was so tasty! I didn't have fresh Thyme either but basil went awesome with it instead. Next time I'm making it with mushrooms.

Turkey Pinwheel
I thought it was great, but I didn't follow the exact recipe. Some changes I made that I thought were fantastic: I didn't add any salt at all, as per other suggestions. I did add garlic powder in its place, because I love garlic in everything. for the center layer: I used feta crumbles rather than shredded italian cheese, (just something I love about spinach and feta together) and I added sauteed mushrooms, onions & garlic to the feta/spinach mixture. for the topping: I didn't use the ketchup, rather just some tomato paste and for the last 25 minutes of baking, I topped the meatloaf with strips of turkey bacon, then broiled it for the last couple minutes so the bacon got crispy. I had the turkey bacon on hand that I needed to use up and thought it was a nice touch to the meatloaf.
