Beef Pho

I loved this Pho recipe! It turned out wonderfully, it actually tasted like pho! I have made pho before (even using the predone cube sachets and beef broth to try to spice it up) and it has turned out miserable and tasteless. But this recipe tasted almost identical to my fave pho restraunt (I am proud of myself!). I ommitted the daikon since I didn't have it on hand and I didn't use the oxtail. I used some large meaty bones from the butcher at the local asian market and they were perfect for a half sized recipe. I followed everything else to a "T" and it was well worth the 6 1/2 hours it took the broth to cook and it smelled wonderful (after I added the spices). Even my picky roommate loved it! (and he hates my cooking most of the time! :P)

All Pumpkins' Night Stew

Simple and delicious stew recipe. At first I wasn't sure about all the caraway but it takes on a mellower flavor after simmering all day. I cooked my stew in the crockpot. I browned the beef and cooked the onions as per the recipe and dumped it into the crock. I ommited 2 cups of the broth and cooked it on high the first two hours then kicked it to low and let it go all day and it came out fabulous. Lovely autumn dinner!

Brazilian Style Flan (Pudim de Leite Condensado)

Delicious flan. I'll have to try some in Brazil on my next visit. My only complaint is that the sugar took FOREVER to turn to syrup. I was stirring for more like 25 minutes next time I will turn up the heat and hope I don't burn it. (edit) I had flan in Brazil many times during my recent visit and this is the real thing. If you have some Brazilian friends for whom you'd like to make a classic Brazilian desert you can't go wrong with this. I recommend topping it with super fine coconut shreds for the real deal.

Black Bean and Chickpea Chili

This was delicious. I only changed two things in this recipe. I added 4 diced (seeded) jalapenos. I also used a bag of dried mixed beans instead of canned black and garbanzo beans.

Ancho-Chipotle Salsa

I found this rather flat and tasteless. I had to keep adding salt and sugar to try to balance it out. I still didn't have much luck with it. It's not bad, just not great. I don't think I will be making this again.

Pork Rib Stew with Sage Cornmeal Dumplings

This was really delicious. I made this in the crockpot. I followed all the directions as stated except I cut the amount of water in half. I also took the suggestion of the other reviewers and added just enough water to make a dough and it worked like a charm. Thank you so much for sharing your great recipe.

German Brotchen Rolls

I'm fairly new to bread making. These rolls came out AWESOME! I followed the instructions and they came out shiny with a nice crusty exterior and light fluffy interior. I will definitely make these again, it's totally worth the effort.

Vintage Lemonade

Lovely lemonade. The lemon oil adds extra depth and gives this lemonade a handsome yellow shade without any food coloring. My family went crazy for this when I made it. I absolutely love this recipe. Thanks to reviewers for the tip on not messing with the zest and sugar, they are so RIGHT! Totally recommend this recipe to friends whenever I get the chance! Thanks so much for sharing!!

Tuna Italiano

I was looking for something to do with some cans of tuna and a can of garbanzos I had laying around. This came out decently tasty and I would probably make again if I had stuff on hand to use up. I tweaked this recipe slightly. I used about 8 cloves of garlic (I like it a lot). I also used tuna in water instead of olive oil after reading some reviews that said this was overly oily. I didn't add water so it's a little on the dry side, but not too much. I am not sure why people said this recipe is tasteless, I added plenty of salt and pepper and it tastes fine to me!

Italian Summer Squash Polenta Bake

Delicious dish made with fresh from the garden summer squash! My mom raved about it and even my dad (who turns his nose up at everything) ate it and proclaimed it was good. Super simple and quick to throw together I will definitely be making this again.

Delicious simple brigadero. I am in love it tastes just like it did in Brazil! I whipped up a batch in the microwave in about 5 minutes then cooled it in the fridge for a few hours and it turned out fantastic.

Jewish Eggplant Lasagna

SUPER SIMPLE, I like super simple. I halved this recipe so it'd fit in my toaster oven. It turned out delicious, like eggplant parm with healthy sauteed goodies mixed in. I'll definitely be making this again in the future. I didn't change a thing and don't think it really needs tweaking, it's delicious as is!

Scalloped Corn and Broccoli

This was a big hit at the dinner table. Quick and easy to throw together. I was looking for something to use up some corn and broccoli. The only change I made was using fresh broccoli instead of frozen. It was a little sweet for my taste with the creamed corn (could have just been the brand of corn *shrugs*).

Vanilla Spice Bread

I found this to be just a touch too sweet for me but it's very good. I could see this making fab french toast like many people have suggested. I made this by hand and had to add the extra flour as suggested. It worked up quite nicely and made a beautiful large loaf. I will definitely make this unique bread again to share with friends!

Veggie Pot Pie

Absolutely positively delicious! I didn't think pot pie could taste so delicious. I used the little Trader Joe's concentrated broth packets for the broth. I also added couple handfuls of dried mixed mushrooms chopped into small pieces (instead of fresh) and used the soaking water for the water component of the broth. I also used my favorite pie crust, the No Roll Pie Crust II recipe from this site as my crusts, I whipped two up in under 5 minutes and didn't have to roll anything. Other than all that chopping this is a super simple recipe. Absolutely rich and flavorful and every bit as savory as a meat dish and super filling. I love it and will definitely be making it again soon.

Spinach and Strawberry Salad

QUICK, SIMPLE, DELICIOUS! I'd probably cut back on the sugar in the dressing a bit if you have sweeter strawberries as it's almost candy-like in quality but it's darn delicious regardless.

Beet and Cheddar Risotto

Maybe it was the cheese I used but this tasted like overpowering cheddar and nothing else. It wasn't even a sharp cheddar! I was very disappointed with the outcome. I followed the recipe to the letter. It was creamy and looked pretty but otherwise it just didn't deliver. I'm really sorry I can't rate this recipe higher.
