Grandmother's Buttermilk Cornbread

This wasn't the best corn bread I've ever had, nor the worst. It was nice and moist, so wasn't lacking there in the least. I read some of the negative reviews to get a taste for what was going on. Some reviews said it was too salty so since I used salted butter I didn't add additional salt which was a good call. Then others suggested cutting back the sugar because it was too sweet. No I am not Southern and I like a sweet corn bread so I was fine with the sugar amount. Mine did back up a little but I still found it to be a bit dense and flat in places but overall the texture was decent. The flavor was the disappointment. People are right it's quite a bland corn bread, a little sweet, a tiny bit of corn taste but not much. It was okay with butter and preserves or honey on it but alone it was quite meh. It did taste quite a bit better after giving it a short rest to cool down.

Spinach and Strawberry Salad

QUICK, SIMPLE, DELICIOUS! I'd probably cut back on the sugar in the dressing a bit if you have sweeter strawberries as it's almost candy-like in quality but it's darn delicious regardless.

Italian Wheat Rolls

Beautiful rolls, these were light and airy, had an amazing flavor and disappeared in two days! I love the single rise of this recipe so they're actually fairly quick to make! I used them as dinner rolls and also as mini vegetarian/dessert calzone wrappers as well. So good!

Pork Rib Stew with Sage Cornmeal Dumplings

This was really delicious. I made this in the crockpot. I followed all the directions as stated except I cut the amount of water in half. I also took the suggestion of the other reviewers and added just enough water to make a dough and it worked like a charm. Thank you so much for sharing your great recipe.

Delicious simple brigadero. I am in love it tastes just like it did in Brazil! I whipped up a batch in the microwave in about 5 minutes then cooled it in the fridge for a few hours and it turned out fantastic.

Jewish Eggplant Lasagna

SUPER SIMPLE, I like super simple. I halved this recipe so it'd fit in my toaster oven. It turned out delicious, like eggplant parm with healthy sauteed goodies mixed in. I'll definitely be making this again in the future. I didn't change a thing and don't think it really needs tweaking, it's delicious as is!

Beet and Cheddar Risotto

Maybe it was the cheese I used but this tasted like overpowering cheddar and nothing else. It wasn't even a sharp cheddar! I was very disappointed with the outcome. I followed the recipe to the letter. It was creamy and looked pretty but otherwise it just didn't deliver. I'm really sorry I can't rate this recipe higher.

Scalloped Corn and Broccoli

This was a big hit at the dinner table. Quick and easy to throw together. I was looking for something to use up some corn and broccoli. The only change I made was using fresh broccoli instead of frozen. It was a little sweet for my taste with the creamed corn (could have just been the brand of corn *shrugs*).

Chicken Pot Pie IX

Simple and absolutely delicious. I paired this with my favorite quick, no roll pie crust and had a fabulous lunch in less than an hour. The only change I made was to throw a little salt and a couple bay leaves in with the boiling chicken for more a more flavorful broth.

Vanilla Spice Bread

I found this to be just a touch too sweet for me but it's very good. I could see this making fab french toast like many people have suggested. I made this by hand and had to add the extra flour as suggested. It worked up quite nicely and made a beautiful large loaf. I will definitely make this unique bread again to share with friends!

Ancho-Chipotle Salsa

I found this rather flat and tasteless. I had to keep adding salt and sugar to try to balance it out. I still didn't have much luck with it. It's not bad, just not great. I don't think I will be making this again.

Brazilian Style Flan (Pudim de Leite Condensado)

Delicious flan. I'll have to try some in Brazil on my next visit. My only complaint is that the sugar took FOREVER to turn to syrup. I was stirring for more like 25 minutes next time I will turn up the heat and hope I don't burn it. (edit) I had flan in Brazil many times during my recent visit and this is the real thing. If you have some Brazilian friends for whom you'd like to make a classic Brazilian desert you can't go wrong with this. I recommend topping it with super fine coconut shreds for the real deal.

Black Bean and Chickpea Chili

This was delicious. I only changed two things in this recipe. I added 4 diced (seeded) jalapenos. I also used a bag of dried mixed beans instead of canned black and garbanzo beans.

Tuna Italiano

I was looking for something to do with some cans of tuna and a can of garbanzos I had laying around. This came out decently tasty and I would probably make again if I had stuff on hand to use up. I tweaked this recipe slightly. I used about 8 cloves of garlic (I like it a lot). I also used tuna in water instead of olive oil after reading some reviews that said this was overly oily. I didn't add water so it's a little on the dry side, but not too much. I am not sure why people said this recipe is tasteless, I added plenty of salt and pepper and it tastes fine to me!
