Pumpkin Chip Cookies

Very soft and cake-like. That's exactly how I like my cookies. The pumpkin wasn't overwhelming, which was nice. A great fall treat.

Penne with Chicken and Pesto

Overall a good recipe. It was just lacking "something" - I couldn't tell what, exactly. I added some peas and some walnuts to the mix. Makes a lot. Good for lunches all week.

Garlic Cheddar Chicken

Very yummy! I used Italian bread crumbs, so omitted the seasonings. Probably won't pour the leftover butter onto the chicken next time - it was swimming in butter by the end.

Elegant Orzo with Wilted Spinach and Pine Nuts

Served this as a cold pasta salad. Used tomato-basil feta and sundried tomatoes. Also used the frozen spinach, as per other reviews. My guests raved about it.

Good Old Fashioned Pancakes

I'm giving up my boxed pancake mixes. This recipe is easy and so yummy! It does have a hint of "sugar cookie" taste to it - which makes it soooo good. I followed the advise of other reviewers and cut back the salt to 1/2 tsp. And I added about 1 tsp vanilla extract. I also took the advice of warming the milk slightly in the microwave and using a room temperature egg. I made some plain and some with blueberries. I had two leftover pancakes - heated in the microwave this morning - mmmmmm.... still delicious!

Strawberry Spinach Salad I

As per other reviews, I also cut the sugar to 1/4 cup. Every time I've made this I've omitted the poppy seeds just because I never have any. Makes more dressing than you need. Add dressing just before serving. Use balsamic vinegar instead of white wine vinegar. Toasted almonds are good, as are walnuts and even pinenuts. I've added some mandarin oranges before - that was good, too.

Wendy's Quick Pasta and Lentils

Needs a little doctoring in the spice department, but overall tasty and filling. I used one 14.5oz can of tomatoes - that seemed to work well. I used Progresso lentil soup - perhaps a different brand would lend more flavor?

Baked Dijon Salmon

Already started making the recipe when I realized I was out of Dijon mustard - so used yellow mustard instead. And only had Italian seasoned bread crumbs on hand. But it was very tasty and I can't wait to make it again!

Chewy Chocolate Chip Oatmeal Cookies

Wonderful! Even my husband loved them - and he is NOT a fan of oatmeal in cookies. I did as others suggested - increasing flour by 1/2 cup and increasing baking soda by 1/2 teaspoon.

Spinach Ziti

Yummy with addition of Italian spices (I used a can of diced tomatoes with basil/oregano/garlic). I also doubled the amount of spinach and cream cheese. Topped off with parmesan cheese at the end. Good as leftovers.

excellent - i used penne because i didn't have ziti on hand - coated the pasta in the sour cream instead of the sour cream "layer" - keep the noodles soft and moist.

excellent - i have a smaller crock pot so i cut back on amounts - but very moist and tasty - i like to put potatoes and carrots on the bottom of the crockpot for automatic sides.
