Balsamic Roasted Pork Loin
I followed the recipe as is. I cannot get steak seasoning where I live so I made my own. That is the only thing I did differently. I marinated it for two hours due to timing but I bet this would be even better if left to marinate over night. My husband barely got seconds as our three kids were literally scarfing it down. He thought there might be some left for a 'midnight snack' - not a chance. Each of the kids (2 girls, 8 &10 and boy, 5) asked for it again. I served it with potatoes and carrots and a loaf of Italian bread.

Apple Pie Muffins
This was a great recipe! The only change I made was to the second batch. I filled the second batch as I normally would for a muffin or cupcake. The first batch when filled to the top over flowed and made a mess. These were a fantastic hit with the family. My oldest daughter ate 3! Thank you for sharing.

Pumpkin Roll Cake
This was the first time i had attempted to make a roll cake. I followed the ingredient list exactly - the flavor was very good. I used a Pampered Chef jelly roll pan, lightly oiled it with olive oil, laid down parchment paper, sprayed it with baking spray. I had no trouble getting it out of the pan. I rolled the cake in a sugared tea towel (the tip regarding wax paper/plastic wrap holding in moisture was helpful) let it cool and had no trouble with it sticking to the towel. My family loved this - it may just become a traditional dessert next to the apple and pumpkin pies. Thank you for a great dessert.
