Zucchini Herb Casserole

This was fantastic! I am a fairly novice cook, so I appreciated the simplicity of this recipe. I was out of oregano so I subbed italian seasoning and added a little feta to the top. Also, instead of white rice, I used quinoa to add some protein to this dish. This recipe leaves quite a bit if room for error and creativity and it certainly pleased my family.

Quinoa Tabbouleh

Very nutritious and tasty, but still a little on the bland side for my tastes. I had no fresh parsley to add, so this may have made a huge difference in the overall taste. I added a bit of feta fresh ground pepper and dried parsley which livened it up a bit.

Sour Cream Salad Dressing

This is a great, versatile dressing. The brown sugar gives it a nice hint of sweetness. This fellow Ukiahan enjoys it very much. ;)

Southwestern Lentil Salad

I love this recipe not only for the flavor, but for the health value as well. A big hit with my family because of the unique blend of flavors that work so well together. The cumin and dijon are key in tying everything together, so I wouldn't try to do without. I added another 1/2 cup of corn for color and flavor. Very very yummy.

Honey Mustard Tofu

The sauce and the tofu needed to be cooked seperately, as suggested before. The sauce a little overwhelmingly sweet and was not suited to my taste, but my husband enjoyed it.

Tamra's Lemon Artichoke Pesto

This was SO great! I was looking for a way to use my new food processor and I was so plesantly surprised with this quick and easy fix. The amount of cayenne was just right for us, though I might take it down to a 1/4 tsp if you don't care for spicy flavor. We used canned artichoke hearts, which worked well, and used some pine nuts as well as walnuts because we had them on hand.

Tofu Sandwich Spread

This recipe is simple yet amazing! I followed the directions but I added a stalk of celery and used white miso because that was all I had. I let is sit for a day like other reviewers has recommended, and it was SO worth the wait! My two year old gobbled it up on wheat toast with lettuce.

Peppermint Snowballs

These cookies got rave reviews this year! My sister and I teamed up to make them, and my mom said that they were the best cookies she had ever had in her entire life (she's not a people pleaser either, so we know she meant it!). Here's a tip for crushing up candy canes or peppermint candy: unwrap them and put them in a plastic bag. use a mallet or meat tenderizer to crush. works like a charm.

Spicy Molasses Cookies

These were exceptional soft and chewy molasses cookies. I used currants rather than raisins because it was all I had on hand, and the extra bit of tang from that gave it a unique and tasty flavor. I've been feeling kind of bored with raisins anyhow, so I'm glad I did it. Would be great with dried cranberry as well.

Dried Cherries, Pecans and Rosemary Brie en Croute

The variety of flavours in this version are superb! I used a 8 oz round brie wheel rather than the larger because it was all I could find at any of the supermarkets. It worked out great! This is a recipe that looks and tastes very elegant, but is actually quite simple to make. The video tutorial was very helpful, as I have never worked with pastry in this way before. Brilliant!

Pesto Pizza

I don't know how one could call this pizza a disappointment! This is exceptional, and a must have for any recipe collection. I sometimes use sundried tomatoes rather than the red bell pepper, but either way it's delicious!

Vegan Lemon Poppy Scones

These were okay, but not really very "sconey". I agree that they turned out much like fluffy pancakes. You won't need but half of the liquid that is called for, so watch out for that. I also recommend adding a tsp of vanilla extract to the batter.

Lentil Soup with Lemon

This soup takes the cake! It's awesome, and I am not a huge lentil fan! I'm a vegetarian, so I replaced the chicken broth with vegetable broth which worked out well. Also, I didn't have any tomato paste on hand, so I just used a little ketchup in it's place. Turned out beautifully! Thanks.

Really Creamy Fettuccine Alfredo

This is a wonderful sauce! I love it for it's ease, but also for it's flavor. I'm a nutmeg fan, so I threw in an extra pinch. Also, I used almond milk in place of regular milk because it's what was in the fridge, and it worked beautifully. I would think plain soy milk would be great too. One could probably get away with scaling back the amount of cream cheese in the recipe to 6 oz. or so for the sake of saving a few calories.

Feta and Beet Stacked Appetizer

I LOVE this recipe. It's very easy and super tasty. I recommend buying prepared (steamed and peeled) beets to make this even easier. It tastes just as good!
